Hey guys!! Did you have a great winter break and holidays? We did!! Of course those winter holidays comes with so many sweets and treats and by the time January rolls around I just want fruits and veggies. After all those desserts and candies and Christmas cookies I actually crave salads lol.
Today I am going to show you an awesome recipe that’s got a bit of spice and some delicious corn all tucked into a lean chicken breast.
But first let me tell you about the find of the century!
Libby’s® Fruits and Vegetables have come out with Libby’s® Vegetable Pouches, a fabulous new way to help you get dinner for your family done in no time!! I know they save me tons of time and taste great!
Okay so these new pouches are miracles! They are microwavable so no extra pots for this mama to wash. They cook in less than 60 seconds which means I can get dinner on the table faster than it takes my kid to ask me “when’s dinner?” I love that I can get hot nutritious veggies on the table in under a minute, I mean how great is that!?! Plus can I mention that these drain so much easier than cans? No more fumbling with a sharp lid to get that liquid out!
These amazing pouches come in five family favorites Sweet Peas, Cut Green Beans, Sliced Carrots, Whole Kernel Sweet Corn and Mixed Vegetables all of which are grown and packed right here in the United States.
They need no refrigeration and can stand up straight but are flexible and can fit in any cabinet and save a ton of space!
So back to the recipe. It’s January which means at least for this month we are all trying to eat a littler healthier right? This recipe is just the ticket! Its is wholesome and has just enough cheese to make is appealing for even the pickiest palettes. I just start with that crowd pleaser… chicken breasts and cut a little pocket in the side. Next I just drain (so easy) a Sweet Corn Libby’s® Vegetable Pouch and pop it all in a bowl with some cream cheese and shredded pepperjack cheese.
Next I just fill up each breast with the filling and sprinkle with seasoning. You can use whatever seasoning floats your boat here, chicken seasoning, taco seasoning or just good old S&P.
