Hey guys!!  I know you all are still soaking up summer and back to school is the last thing on your mind, but it’s coming.  You can smell the sharpened pencils and crayons from the Back to School section you swear wasn’t at your Walmart yesterday.  Your inbox is now filling up with daily bookbag sales, 50% off uniforms and lunchboxes waiting to be monogrammed with your kid’s name.  You may hate it, but I love Back To School time!  Even before I had kids, I just loved it, maybe because it signals the beginning of my favorite season, fall.

Whether you love it or hate it, it will be here before you know it.

Last year Dean would only take Tyson® Fun Nuggets to school for lunch and that was fine with me.  It made my mornings so easy!  I just popped a few in the toaster oven and in just a few minutes they were ready to go in his bento box and he was off to school.

Now that Sam is a toddler he also is in love with these dino shaped nuggets so I always keep them on hand.  They make a perfect quick lunch or a super fast dinner for those nights when you just can’t think about cooking.

On those particularly busy nights, I like to make an easy and fun dinner, it takes just minutes to cook up some Tyson® Fun Nuggets and to make this quick dinner fun, I serve it on a little wax or parchment paper complete with asparagus trees, and quesadilla volcanos.  I can’t forget the ranch clouds for dipping!

This dinner is my go to because it takes minutes, I know my boys will devour it and it is fun, they love it!  They actually get to play with their food!  And clean up is a snap!  Just ball up the paper, throw it away and you’re out of there!

My boys will eat anything if I put it on a tortilla, so quesadillas are also a staple around here.  They love it when I cut them into triangles and make “volcanos” complete with salsa lava for dipping!  This dinner is so easy to make and you probably have everything on hand.  You can totally customize these quesadillas by changing up the flavor of the tortilla or adding in veggies or different cheeses.

If we are in a big rush I just skewer Tyson® Fun Nuggets with cherry tomatoes and the kids can dip till their hearts and tummies are content!
