These of course are great for a party but I really enjoy making them for a delicious and quick dinner. I know egg rolls don’t always sound like they will be fast and easy but I promise this is a really quick recipe and once you make them the first time you will be making them again and again!
I use deli sliced roast beef, provolone cheese and caramelized onions. This gets rolled up into an egg roll wrapper and then quickly fried until golden brown and crispy.
I love that you can customize these how you like. You can leave out the onions or even add bell peppers. Switch up the cheese and add your favorite, pepperjack cheese would be fabulous in this. I use deli sliced roast beef but it is also a great way to use up leftover roast beef from dinner.
These can also be made in the air fryer if you don’t feel like pan frying the egg rolls.
These are always a hit whether you make them for a party or just a quick dinner. You just whip up a quick au jus for dipping.

Ingredients
- Caramelized Onions – The best way to caramelize onions is to just thinly slice or chop them and sautee them in a pan with a bit of butter until they are golden brown.
- Egg Roll Wrappers – I find these in the produce section of the grocery store.
- Roast Beef – I use deli sliced roast beef but you can use the prepackaged kind of even leftover roast beef.
- Provolone – Provolone is most commonly used in french dip sandwiches but you can switch it out to your favorite cheese.
- Vegetable oil – I prefer to fry with vegetable oil but feel free to use canola or peanut oil for frying if you prefer.
- Minced Onion – Dried, minced onion adds a great flavor to the au jus.
- Garlic Powder – This also is to the flavor the au jus.
- Beef Broth – I like to use the low sodium version as the base to the au jus.
- Worcestershire Sauce – This adds a rich savoriness to the au jus for dipping.
