This Crock Pot Red Beans and Rice is such a comforting and hearty dinner!

This Slow Cooker Red Beans and Rice is my new favorite go to!  No soaking the dried beans, you just pop them in the slow cooker and they come out perfect every time.  Onion, bell pepper and celery help flavor this dish along with some andouille sausage.  Everything slow cooks all day and is perfectly flavorful over fluffy white rice.

There is nothing I love more an easy dinner that I can just throw in the slow cooker that everyone will love and these red beans and rice fit the bill.

I love that I can just throw everything in the slow cooker and have a delicious, flavorful dinner that everyone enjoys.  Whenever I find a dinner that everyone in my house likes that makes me happy!  And for it to be in the slow cooker? That’s a double score!

My husband is from Louisianna and he totally approves this dish.  He loves red beans and rice and this is his favorite recipe.

This dish is full of flavorful sausage, veggies, and beans that cook down into a hearty dish full of flavor.  This is such a stick-to-your-ribs classic meal and always a favorite with my family.

I love that you can customize this to your family’s taste, make it spicy, add your favorite seasonings or more veggies, you can totally make this recipe your own to fit your family’s tastes.

Can we also take a minute to talk about what a crowd-pleaser red beans and rice is.  Everyone loves this and it can feed a good amount of people.  This is also so good the next day and the day after, it just keeps getting better and better!

What is the best sausage for red beans and rice?

Traditionally andouille sausage is used and I like to use that as it adds a lot of flavor to the beans.  Some brands can be a little spicy and if you are sensitive to spice you can certainly substitute just a regular smoked sausage.  You can also use turkey or chicken sausage as well.  

What should I serve this with?

Of course, this gets served with a good scoop of white rice but potato salad is also great with it, and you can’t have red beans and rice without some cornbread.  I like to have it with this Corn Casserole.  We also love to serve this alongside this Slow Cooker Jambalaya Pasta.

Can I make this spicier?

You can add red pepper flakes or jalapenos to give this a kick. 

What are the best beans for red beans and rice?

I like to use dried small red beans, some people like to use red kidney beans.  Red kidney beans can pose a health risk is not prepared correctly.  They must be boiled for 10 minutes before slow cooking.  I prefer to just use the small red beans which require no preboiling.

Ingredients used

  • Andouille sausage –  This is a flavorful sausage often used in cajun dishes.  This is perfect for this recipe as it adds plenty of flavor.
  • Red beans –  As mentioned above I prefer to use dried small red beans.  The cook up great and make a really creamy red beans and rice. 
  • Celery – This is for flavor. 
  • Green bell pepper –  Green bell pepper is a staple for flavor in this dish.
  • Onion – You can use a chopped white or yellow onion.
  • Garlic – I like to use pre-chopped garlic to save time but you can use fresh. 
  • Tomato sauce –  Just a bit to help create a base. 
  • Chicken stock –  I like to use low sodium. 
  • Cajun seasoning –  I use Tony’s but use your favorite.

How to make Slow Cooker Red Beans and Rice

 

  1. FULL RECIPE BELOW
  2. Slice your sausage.
  3. In a medium skillet over medium high heat brown the sausage.
  4. Place the browned sausage into your slow cooker.
  5. To your slow cooker add the beans, celery, bell pepper, onion, garlic, tomato sauce, chicken stock and cajun seasoning. 
  6. Cook on low for 8 hours or high for 6 hours. 
  7. You can thicken this up by taking a spoon and pressing some of the beans against the side of the slow cooker and mashing them.  These mashed-up beans will help thicken the sauce. 
  8. Serve over white rice.

Ingredients

  • 1 pound andouille sausage
  • 1 pound dried small red beans
  • 2 stalks celery, chopped
  • 1 green bell pepper, chopped
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 (15 ounce) can tomato sauce
  • 4 cups chicken stock
  • 2 tablespoons cajun seasoning
  • Cooked white rice for serving

Instructions

  1. Slice your sausage.
  2. In a medium skillet over medium high heat brown the sausage.
  3. Place the browned sausage into your slow cooker.
  4. To your slow cooker add the beans, celery, bell pepper, onion, garlic, tomato sauce, chicken stock and cajun seasoning. 
  5. Cook on low for 8 hours or high for 6 hours.

Notes

  • Store leftovers in the fridge for up to 4 days. 
  • You can use any smoked sausage you like.  Andouille can have a bit of heat to it, so you can substitute smoked sausage if your family prefers. 
  • You can make this spicy by adding chopped jalapenos or hot sauce. 
  • I use small red dried beans, you can use dried kidney beans but you HAVE to boil them for 10 minutes before adding them to your slow cooker.
