Ingredients for this easy corned beef
- Corned beef- You can find these easily in the grocery stores especially in March.
- Seasoning packet- From the corned beef. Do not throw this spice packet away it has all the flavor you need.
- Baby potatoes- You can use red potatoes or yellow baby potatoes. You can also dice up larger potatoes but I would peel them first.
- Baby carrots- You can certainly slice up larger carrots but it is so easy to just dump in a bag of baby carrots.
- Onion- Yellow onion or white onion will work great here. You can also use a red onion if you like.
- Cabbage cut into wedges- I like to cut my cabbage into wedges so they stay together.
- Chicken stock- I prefer to use a low sodium chicken stock since the beef and seasoning are pretty salty on their own. You can also use low sodium beef stock if you prefer.
Gather your ingredients
Place ingredients in the slow cooker.
Cover and cook for 8 hours.

- Around the edges of the slow cooker add your onion and cabbage pieces.
- Place the corned beef in the middle.
- Sprinkle the seasoning over the corned beef.
- Pour the chicken stock into the slow cooker.
- Cover and cook on low for 8-9 hours.
- Remove the corned beef from the slow cooker when tender and slice or shred.
- Serve with the cooked veggies.
- Serve!
- Store the leftovers in an airtight container in the refrigerator for up to 3 days.

- 1 pound baby potatoes
- 1 pound baby carrots
- 1 yellow onion cut into pieces
- 1 small head of cabbage cut into wedges
- 1 cup chicken stock
Instructions
- In the bottom of your slow cooker add the carrots and potatoes.
- Around the edges of the slow cooker add your onion and cabbage pieces.
- Place the corned beef in the middle.
- Sprinkle the seasoning over the corned beef.
