Hey guys!!  It is Fall!! I love it!  It makes me want to get in the kitchen and create all sorts of yummy, warm, comforting dinners!  Although sometimes my busy schedule doesn’t give me too much time in the kitchen, so I am always on the look out for things to help me get dinner on the table fast.

One of my favorite brands to keep in the freezer for those busy nights is Alexia.  They make delicious side dishes where they take the simple and making it extraordinary and delicious!  They use the highest quality ingredients which you can taste and create gourmet dishes that take our boring Wednesday night dinner to something extraordinary!

I recently spotted their new premium vegetable sides and I was super excited to try them because not only are the frozen so I can keep them on hand but they also cook up in minutes right in the microwave, and they are a great way to get more veggies into my kids!  I mean who doesn’t have that problem lol

Butternut Squash Cauliflower Pilaf (1 of 1)

Not only are these vegetable side dishes made with premium vegetables and non-GMO but they are gluten free and use organic dairy ingredients!  I am always trying to find a starch replacement for dinners, sometimes I get tired of the same old white rice and mashed potatoes and hey this way again great way to get extra veggies into my kids (and my husband lol).

After a busy day I love that I can just pull these out of the freezer and in less than 10 minutes they are done!

One of my favorite quick dinners to pair with these yummy sides is Molasses Glazed Chicken.  It is also quick so this whole dinner comes together in no time.

Sweet molasses, soy sauce and garlic give this chicken an amazing glaze that goes great with the vegetable sides.

I love serving this over Alexia Mashed Cauliflower with Butter and Sea Salt which I think we like even better than mashed potatoes! It sure is a lot easier lol.

Mashed Cauliflower (1 of 1) Riced Vegetable Pilaf (1 of 1)

My favorite way to serve it though is over their Riced Vegetable Pilaf with Sea Salt.  Riced cauliflower and butternut squash pair beautifully with the molasses glaze on the chicken!

I cannot wait to try their other complete side dishes like Mashed Butternut Squash with Butter and Brown Sugar, Riced Cauliflower with Aged White Cheddar, Cauliflower Risotto with Parmesan and Sea Salt and Butternut Squash Risotto with Parmesan.  I know I will definitely be stocking my freezer with all these delicious sides!
