Hey y’all!! I promised I would be back with some more amazing quick and simple meals with Campbell’s Soups For Easy Cooking ideas and here we go!
Now most of you know I am OBSESSED with Mexican food, pretty sure I could eat it every night. So of course when I spotted the Mexican Style Tomato Soups For Easy Cooking at Walmart this week I loaded up my cart (probably went overboard lol).
As we talked about before dinner time around here can be stressful. Trying to get a timely delicious meal to fill up my husband before he goes to work at night is a challenge. If a recipe takes too long, he has to go to work without dinner (he grabs something on the way to work, don’t worry I’m not starving him lol). So I have to make sure that I have quick easy meals that are tasty on hand.
These Campbell’s Soups For Easy Cooking are a life saver! They are full of flavor and help me get an incredible dinner on the table in under 30 minutes, perfect for our crazy nights.
So onto this recipe. I am so glad I bought a ton of the Mexican Style Tomato flavor because it is amazing! It is rich and perfectly spiced. I cannot wait to use it for everything, tacos, meatloaf, pork, casseroles, the possibilities are endless.
I have noticed on Pinterest that people are crazy for chicken breasts topped with cheese and some kind of sauce. My family is crazy about enchiladas so I mixed the two ideas together and came up with this Enchilada Baked Chicken. Traditional enchiladas always take me forever to make with all the rolling and filling and it is time consuming. With this dish we can have all the flavor of enchiladas but quicker!
Chicken breasts are baked in that rich Mexican Style Tomato Soup (which will make your house smell heavenly by the way).
Then placed on a bed of rice and topped with black beans, green chiles and cheese, yum, yum!
This recipe is fast to make because 1) You start with an incredible sauce that bathes your dish in flavor and 2) You can get everything ready while the chicken is baking so dinner is ready in a snap.
See how awesome this looks!?! P.S. It tasted just as awesome! The chicken had all that enchilada flavor we love without the work. Plus that Mexican Style Tomato Soup is amazing on the rice! This is our new favorite dinner!
Enchilada Baked Chicken
- 3-4 boneless skinless chicken breasts
- 1 carton Campbell's Easy Soups For Cooking Mexican Style Tomato
- Can of black beans
- Small can green chiles
- Sliced cheese cheddar, colby, pepperjack, whatever you like
- 2 cups rice
- First place your chicken breasts in a baking dish and cover with half the carton of soup.
- Bake at 400 degrees 15-20 minutes until breasts are cooked through.
- While chicken is baking prepare your 2 cups of rice (bring to boil in a pot with 4 cups of water, reduce heat to low and cook for 16 minutes or until tender)
- Now all you have to do is assemble.
- In a baking dish lay down your rice and top with the chicken breasts.
- Pour the rest of the soup over the chicken.
- Top with black beans, chiles and cheese.
- Bake for 5-10 minutes until cheese is melted.
- Serve to your hungry family!
This is another winner in our book and since Campbell’s Soups For Easy Cooking make it such a quick dish to prepare I know my milkman will get to work on time with a full tummy!
