Hey ya’ll!!  Today I have got a light and creamy pie that is sooo easy to make and perfect for these warmer months.

Mini Citrus Cream Pies

It is finally getting warmer outside!  The sun is out and the pool and beach are just waiting!  Summer time for me brings back fond memories of when I was younger and my grandma would throw these amazing BBQs where we would roast on the grill a whole pig.  With my tanned arms squeezed into those little plastic water wings I would spend the day jumping in the pool with my friends.  Through our chlorine filled noses we could smell that pork cooking all day.  The sun, the swimming and the smell all day made us ravenous little girls by dinner time.  Here in the south when you roast a whole pig like that it’s called a “Pig Pickin'” and no pig pickin’ would be complete without a pig pickin’ cake and that is my all time favorite cake!  Mandarin oranges and crushed pineapple mixed with whipped cream make up the icing of that cake and it is divine.

Today I am going to show you how to get the flavor of that delicious summer time cake in a quick and effortless pie.  I was at Walmart like I am every week for groceries and I saw these cute little Keebler® Ready Crust® Mini Graham Cracker Pie Crusts and knew I wanted to make some quick pies.  Finishing up my shopping I spotted Oikos® Key Lime Greek Yogurt which I knew would be the perfect filling for my pie.  Of course you can’t have pie without a mound of whipped cream so I grabbed my favorite Reddi-Wip® for the job.  I spotted these cute mandarin oranges and I knew I wanted to add that pig pickin’ flavor to these little pies so I grabbed some pineapple too.

Effortless Pies

Oh I love these little crusts!!  I cannot wait to use them to make 1000 little pie varieties this summer.  They could not be any cuter or easy, they already did all the hard work for you!

I am glad I grabbed a few extra of these Oikos® Key Lime Greek Yogurt because they are my favorite!!

Now onto these effortless pies.  They take minutes to prepare!  I just chop up the mandarin oranges and pineapple pretty finely and mix with the yogurt.

I then spoon that into those cute little crusts.

Citrus Pie Filling

Next I top them off with a tall mound of Reddi-Wip® which gets adorned with a little slice of orange, pineapple and of course every pie needs a cherry on top!

I love the lightness of these pies and their citrus punch.  I also love that these pies were well… easy as pie to make!

Ingredients

  • 3 Oikos® Key Lime Greek Yogurt
  • Reddi-wip®
  • Keebler® Ready Crust® Mini Graham Cracker Pie Crust, 6-count
  • Fresh Pineapple
  • Mandarin Oranges
  • Cherries

Instructions

  1. Chop about half a cup of fresh pineapple and half a cup mandarin oranges.
  2. Mix them into a bowl with all 3 yogurts.
  3. Spoon the mixture evenly into 6 crusts.
  4. Top with Reddi-wip® .
  5. Garnish with pineapple, oranges and cherries. Yum!!

These pies are creamy, citrusy, full of flavor and literally take minutes to make and you don’t have to heat up your kitchen one bit to get these beauties made.

Mini Citrus Pie

My Mini Citrus Cream Pies are a huge hit at any BBQs, cookouts any kind of party!  They are refreshing and cool and everyone loves them.  Dean even likes to help make them for a sweet treat on those muggy nights after dinner.

I love making them for parties because they are so cute, so full of flavor and like I said take minutes to make.

    1. These would be good with any flavor yogurt. I love Greek yogurt. the cocoanut is wonderful. So easy to make if someone drops in unexpectedly. They can even stand around with you in the kitchen or help put them together. Kids would love doing this as their treat making dessert for dinner.samzacnat@outlook.com

  1. I will be making these!!, just for a small dinner, though! For 40 years, my husband and brother-in-law had been cooking a 100lb. pig on a spit for the 4th. of July. We always called it a pig roast. It was a tradition around our area (not from the south) in PA. Don’t do it much anymore, just a regular picnic, since they are getting too old & it’s too much for them, but, IT’S BEST PORK EVER EATEN!!!!!!!5 stars
