This Cornbread Casserole is a fabulous side dish all through the holiday season. 

This Loaded Cornbread Casserole is such a fabulous side dish for any holiday or get together.  This is a rich, moist corn casserole made with cornbread mix, butter, cream cheese, creamed corn and corn.  You load it up with scallions, bacon and cheese to really put it over the top!  This comes together in minutes and will be a new addition to all your holiday dinners.

I love the holidays and all the feasts that come with them but as much as I love turkey and ham I am totally here for the side dishes, they are the best part. 

I have always loved corn casserole, it is such an easy, rich dish that everyone loves.  This year I decided to take it up a notch and make this loaded version filled with delicious add-ins like bacon, cheese and scallions. 

This is a hit with kids and adults with it’s rich and slightly sweet flavor and perfect for entertaining.  I serve this every holiday and am always so sad there are never any leftovers! This always goes so fast. 

The base starts with my favorite corn casserole recipe which consists of Jiffy Corn Mix, canned corn, creamed corn and cream cheese.  This one has some delicious additions to really take this to the next level.

One of my favorite things about this recipe is that I can make it ahead of time.  This is fabulous warmed up when you need it but I like to make it the day before and just bake it before serving. 

This holiday season I know this is going to be your new favorite side dish for all your holiday get-togethers.  It is always a crowd-pleaser and sure to impress.

INGREDIENTS NEEDED

  • Butter –  This gives this casserole some richness.
  • Cream cheese –  Some people use sour cream but I love to use cream cheese it makes
  • Jiffy Cornbread –  I only use Jiffy for this recipe because you need 2 boxes of it and it the exact amount you need.
  • Can creamed corn –  Do not drain this. 
  • Can corn –  Do not drain this either.
  • Shredded cheddar cheese –  You can use any flavor including pepperjack. 
  • Scallions –  These add so much flavor.
  • Bacon – This adds a great pop of flavor and salty richness.

HOW TO MAKE LOADED CORNBREAD CASSEROLE

  1. FULL RECIPE BELOW 
  2. Preheat your oven to 350 degrees.
  3. In a large mixing bowl put your butter and cream cheese together. 
  4. Microwave in 30 second intervals until all melted and smooth.
  5. Whisk together the cream cheese and butter until smooth.
  6. Using a wooden spoon stir in the cornbread mix, the can of creamed corn, the undrained can of corn, 1 cup of shredded cheddar cheese, the bacon and scallions.  You can reserve a few scallions and bacon for the top if you like. 
  7. Top with the remaining cheese.
  8. Place in the oven and bake for 35-45 minutes until golden and a toothpick inserted in the middle comes out clean. 
  9. Top with more scallions and serve!

What can I add to this casserole?

This casserole is delicious as is with the addition of bacon, scallions and shredded cheese but you can any of your favorites additions like jalapenos, green chilies, ham, sausage, pepperjack cheese, bell pepper, and caramelized onions.  You can really make this your own. 

What should I serve this with?

This is a great side dish for any meal but I like to serve it around the holidays with my turkey or ham.

Can I make this ahead of time?

Yes! I always make this ahead of time.  You can bake this ahead of time and warm it up but I like to make it the day before I need it and just bake it off before dinner time.

  • 1/2 cup butter, softened
  • 8 ounces of cream cheese, softened
  • 2 (8.5 ounce) boxes of Jiffy Cornbread Mix
  • 14.75 ounce can creamed corn
  • 15 ounce can corn, undrained
  • 2 cups shredded cheddar cheese, divided
  • ¼ cup scallions, chopped
  • 8 slices bacon, cooked and crumbled

Instructions

  1. Preheat your oven to 350 degrees.
