I have found myself looking for quick dinner recipes, mainly easy chicken recipes lately.  I have been having more and more busy days which leads to more and more busy nights.  All that leads to me running around my kitchen with a toddler clinging to my leg while I am trying to get dinner on the table at a reasonable time.  I could use all the help I can get!

Being married to the milkman I need to have dinner on the table before he has to leave for work so I have a huge time limit I have to meet but I don’t want to resort to frozen pizzas and pbjs lol.

So when I saw these Land O’ Lakes Sauté Express® Sauté Starters I knew these were the key to getting some pretty amazing dinners on the table minus a lot of prep work.  So I picked up the Garlic and Herb flavor and let me say I just want to cook everything in it!!

I was running late that night as usual and remembered the Sauté Express® Sauté Starter I had bought and pulled a few other ingredients out of my fridge and thus this recipe for Chicken Fajita Salad with Chipotle Ranch Dressing was born and it was a winner!  We just love easy chicken recipes around here and Land O’ Lakes Sauté Express® Sauté Starters make it so easy to come up with quick dinner ideas.

Melting the Sauté Express® Sauté Starter in the pan, adding the chicken, slicing a few veggies and giving those a quick saute in the pan could not have been easier.  The flavor was outstanding and the chicken was so tender and paired perfectly with the crisp lettuce and crunchy taco shell bowl.

Everyone loved being able to construct their own chicken fajita salad with their own customized toppings and everybody loved the chipotle ranch dressing which gave the whole dish a little kick.

Chicken Fajita Salad with Chipotle Ranch Dressing

So first I popped a Land O’ Lakes Sauté Express® Sauté Starter in the Garlic and Herb Flavor in a pan and let that melt.

Then I added my chicken breast and let that get brown and tasty and cooked through. 

I added sliced green and red bell pepper and a little sweet onion until they got some color.

I got all my “fixins” ready which included a crispy taco bowl, iceberg lettuce tossed with some Chipotle Ranch Dressing, green onions, cheddar cheese, and corn and black beans so everyone could customize their own salad bowl.

Everyone added their favorite toppings to their salad bowl and voila a quick and filling dinner was ready in minutes.

Yummy!!

Chicken Fajita Salad Bowl with Chipotle Ranch Dressing

Ingredients

• 2 boneless skinless chicken breasts
• Land O' Lakes Sauté Express® Sauté Starter in Garlic and Herb
• Small green bell pepper sliced
• Small red bell pepper sliced
• Small sweet onion sliced
• 1/2-1 cup cheddar cheese shredded, or pepperjack
• green onions diced
• corn and black bean mix
• Crispy taco shell bowl baked according to directions
• 1/2 cup ranch dressing
• 2 t canned chipotle liquid
• half a head of iceberg lettuce chopped

Instructions

1. In a bowl whisk the ranch and chipotle together till blended and set aside.
2. In a skillet melt the Land O' Lakes Sauté Express® Sauté Starter cube.
3. Saute the chicken breasts in skillet until cooked through. Remove from pan.
4. Add peppers and onion to the same skillet and saute until they have a little color and still have some crunch left.
5. Toss lettuce with dressing and place in taco bowls.
6. Slice chicken.
7. Serve the chicken, peppers and onions, corn and black beans, cheese, and green onions and let everyone create their own chicken fajita salad bowls with all the toppings.
