These cookies are buttery and rich but are light and melt in your mouth with a great little pop of chocolate on top.

There is nothing I love more than baking during the holidays, I love getting all the sprinkles and icings, and different cookies and creating huge platters of cookies for our Easter lunch and of course for giving our as gifts!! Of all the cookies I make during the Spring these have to be my favorite!

These are so easy to make and require ingredients I bet you already have on hand!  I love making them because they are so gorgeous with all the sprinkles on the outside.

They are so delicious!! I thought my husband was going to eat to the whole batch!  They have become my grandma’s new favorite cookies and that is saying something especially since her name is Cookie lol.

Can I make these just one color?

Sure! You can use just color sprinkle if you like.  I love the way they look rolled in a bunch of different color sprinkles but you can surely just use one.

Can I make these ahead of time?

You can make the dough and put it in the fridge the night before to save some time.  They also stay fresh for a bit in an airtight container but they never last long around here anyways.

Can I use margarine instead of butter?

Please don’t! These cookies have an out of this world buttery flavor that can only come from real butter.

Can I make top these with other candy?

Yes! I like to use the Hugs Kisses but around Easter you might be able to find more Spring flavored and colored kisses.  You can also top them with different Easter candy.

FREEZER INSTRUCTIONS:

Want to get a head start on your holiday baking? You can make these ahead of time and keep them in the freezer until you are ready for Easter!

Just bake your cookies and let them cool COMPLETELY! Then you can store them in an airtight container for up to 6 months.  If stacking the cookies in the container place a piece of wax paper or parchment paper between the layers.  Make sure that you remove them from their container to thaw so condensation does not form.

You can also freeze the dough for up to 3 months ahead of time.

Ingredients

  • Butter – You of course need to use some good butter for this recipe.  Use unsalted so you can control the amount of salt you add to the dough.
  • Sugar –  Just granulated sugar is all you need to make these cookies sweet!
  • Egg –  Helps bind the cookies and give them some richness and rise.
  • Vanilla extract –  A little vanilla extract is always good in any cookie even if you are adding other flavorings.
  • Almond extract – I like to use almond extract in these cookies but you can also use lemon, strawberry or orange flavoring.
  • Flour –  Just all-purpose flour is all you need.
  • Baking soda –  Gives the cookies their rise.
  • Salt  –  Just a pinch to make the flavors pop.
  • Milk –  A little bit of milk will make the cookies nice and tender.
  • Pastel sanding sugar, pink, yellow, green, blue – These give the cookies their sparkly, colorful look.
  • 24 Hershey Hugs Kisses –  I like to use the Hugs because the chocolate and white stripe looks adorable on these cookies.
