How to make these Grilled Cheese Burritos

  1. Full recipe below.
  2. In a medium skillet over medium heat brown and drain your ground beef.
  3. To the drained beef add your taco seasoning and water and cook for about 5 minutes until the sauce slightly thickens.
  4. Mix the mayonnaise with the chipotle sauce.
  5. Start assembling your burritos.
  6. In each tortilla add nacho cheese, a quarter of the meat mixture and ½ cup rice.
  7. Evenly divide the chipotle sauce amongst the 4 burritos.
  8. Top each one with some sour cream and a good amount of tortilla strips.
  9. Fold the burritos up.
  10. In a non stick skillet over medium heat add ¼ cup of shredded cheese.
  11. Place the assembled burrito seam side down on the cheese in the pan.
  12. Cook until the cheese is browned and adhered to the burrito. 
  13. Using a spatula lift the burrito out of the pan, sprinkle another ¼ cup of cheese in the pan and flip the burrito onto the cheese and cook that side.

  • Lean ground beef- I like to use lean ground beef for this recipe but you can also use ground turkey, cooked chicken or cooked steak.
  • Taco Bell taco seasoning-I like to use Taco Bell taco seasoning to help them taste just like the
    taco bell version.  You can also use a homemade taco seasoning blend.
  • Rico’s nacho cheese sauce-  You can use any nacho cheese sauce you like.  
  • Prepared mexican rice-  I just used a box mix from the store for either mexican rice or spanish rice.
  • Mayonnaise-  This is the base for the chipotle sauce.
  • Chipotle sauce- From a can of chipotles in adobo.
  • Sour cream-  This is optional of course but it is in the original.  I like to use a reduced-fat sour cream.
  • Tortilla Strips- I find these in the salad aisle of the grocery store, you could also use tortilla chips broken up. 
  • Burrito size tortillas-  You need the burrito-sized flour tortillas for these huge burritos.
  • Shredded colby jack cheese-  You can use a mexican blend, fiesta blend or any blend of cheese you like.

Can I use any protein?

Of course!  You can order this at Taco Bell with seasoned ground beef, grilled chicken or steak so you could easily use any of those in these delicious burritos.  You can also skip the meat and just use refried beans or black beans.

Can I customize these?

You sure can! Leave out any ingredients you don’t like or add anything you do! You can add lettuce, tomatoes, jalapenos, salsa, guacamole, anything!

  • 1 (15 ounce) can Rico’s nacho cheese sauce
  • 2 cups prepared mexican rice
  • 2 tablespoons mayonnaise
  • 1 tablespoon chipotle sauce from a can of chipotles in adobo
  • Sour cream
  • Tortilla Strips
  • 4 burrito size tortillas
  • 2 cups shredded colby jack cheese
