- Make your eggs one sandwich at a time.
- Whisk 2 eggs until combined.
- Spray a medium non-stick skillet with cooking spray.
- On low heat add your 2 beaten eggs.
- Let the eggs fill the bottom of the pan.
- Once the eggs are just about cooked run your spatula around the edge to loosen them.
- Fold one side of the egg to the middle and repeat with the other side.
- Next fold the short end to the middle and repeat with the other side.
