Hey yall!!!  I don’t know about you but I love to snack, especially on the weekends in front of a good movie.  Some times when the credits roll I look down at the remains of my snacking and I don’t feel too good.  I wanted to make some delicious snacks without the guilt so my movie snacking would have a happy ending as well.  Enter 7UP TEN.  It has all the amazing flavor of 7UP without the guilt.

I decided it would be perfect for crafting some amazing movie snacks.  So while I was at Kroger doing a little grocery shopping I made sure to pick up some for the weekend movie fest we had planned.

Now normally we love to munch on chips dunked in a jarred cheese sauce or a cream cheese based dip.  I wanted to lighten up our usual nacho snack by making these Citrus Grilled Chicken Nachos.   I love marinating meat in soda, it provides such a great flavor and really tenderizes the meat.

 The lemon lime flavor of the 7UP TEN paired perfectly with a little taco seasoning and garlic to make some killer tender grilled chicken for my nachos.  I switched out my chips for some baked ones, my cheese sauce for a little sharp cheddar, a veggie heavy salsa and a drizzle of lite sour cream rounded out this tasty movie staple.  This chicken is also great for salads, tacos, burritos or even by itself!

Citrus Grilled Chicken Nachos with 7UP TEN

Ingredients

  • 2 boneless skinless chicken breasts
  • 1 cup 7UP TEN
  • 1-2 cloves garlic minced
  • 2 Tablespoons taco seasoning
  • Baked tortilla chips
  • Grated sharp cheddar
  • Lite sour cream
  • Salsa

Instructions

  1. In a gallon ziploc bag mix the 7UP TEN, garlic and taco seasoning.
  2. Add in chicken.
  3. Let marinate 2 hours to overnight.
  4. Grill until cooked through and juices run clear.
  5. Dice chicken into bite sized pieces.
  6. Place chicken on a bed of tortilla chips.
  7. Sprinkle some shredded cheddar over the chips and chicken.
  8. Pop under broiler or in microwave until cheese is melted.
  9. Top with salsa and sour cream or any other of your favorite nacho toppings.
These nachos were delicious and filling.  I loved that I could nibble on them all throughout the movie and not regret it at the end of the night.

Now if I am craving a little sweet snack I make a super simple 7UP TEN float.  I just fill a frosty mason jar up with the 7UP TEN and then add a large scoop of fat free lime sherbet.  It is refreshing and tastes amazing!  It also is a fabulous way to have a little ice cream treat without worrying about all the calories!

  1. This citrus grilled chicken nachos recipe looks and sounds amazing! I will definately have to try this recipe as I am sure the guys will love it! I had no idea about the 10’s, I will have to check those out! I have a couple recipes that call for rootbeer so reducing the calories means I can cook them again!
