Bacon Wrapped Mashed Potato Stuffed Chicken
Hey! It’s fall y’all!! (I never get tired of saying that!) I love this weather, it is just starting to get chilly, the air feels brisk and we all start to hunker down in sweaters, boots, scarves and quilts.
It is also the time of year that we all want super comforting meals especially for the holidays. You know what I love most about the holidays (besides the amazing food) I love spending time with my family friends! I do not love spending that time in the kitchen peeling potatoes ughhh!
So when the holidays roll around demanding mashed potatoes I reach for my Idaho Spuds. They help me get everyone’s favorite part of a holiday meal on the table in no time!
I love the holidays so much that I often host several different holiday parties throughout the season and my guests never get bored thanks to Idaho Spuds five down right delicious flavors like Three Cheese and Roasted Garlic.
During the holidays your guests can get pretty tired of eating ham after ham and turkey after turkey so I decided to make one spectacular holiday dish that is easy, elegant, delicious and did I mention easy?
Chicken breasts are stuffed with Roasted Garlic Mashed Potatoes and wrapped in bacon before getting a brown sugar mustard glaze, delicious!!!
So so simple to make.
Just prepare your Idaho Spuds, I chose Roasted Garlic but any of their fabulous flavors will work here.
Next stuff some of those delicious potatoes into a chicken breast that has a pocket cut into it.
Wrap the whole thing in 2 slices of bacon.
Glaze with brown sugar and mustard.
Bake!
This chicken is so amazing! The bacon gets caramelized with the sugar and when you take a bite you get a pop of creamy garlic potatoes inside the chicken. The drippings make an excellent gravy for extra potatoes on the side, yum!
These are so pretty and their taste will really wow your guests!
