Hey guys!!  While you still may be soaking up those summer days if you have been to Target lately then you know back to school time is coming.  You can smell the sharpened pencils and crayons from the Back to School section even though there’s still bathing suits for sale.  You may hate it, but I love Back To School time!  Even before I had kids, I just loved it, maybe because it signals the beginning of my favorite season, Fall.

I love organizing everything we need for the new school year and planning lunches to pack.

I always get all my school supplies from Target and while shopping in their dollar spot (my favorite section!) I found these cute lunch boxes!  Perfect for creating easy to eat lunches.  No million baggies and packages to open which saves time in the lunch room.

Back to school time is one of my favorites but as a mom it is also one of the busiest and it never slows down! So I am always looking for quick dinners to get me through those super busy nights when there are baths to give, homework to do and lunches to make.

Speaking of lunches I love to make cute lunches for my kids in the little bento boxes.  I also am always on the lookout for easy and quick breakfasts for me and my kids.

That’s why when I am stocking up on school supplies at Target I make to grab plenty of my favorite time savers in the kitchen.  Keeping my freezer full of Tyson® Crispy Chicken Strips, Tyson® Fun Nuggets, Jimmy Dean® Sausage, Egg, & Cheese Croissant and State Fair® Beef Corn Dogs ensures that I will always have a quick lunch, dinner or breakfast on hand.  I also always keep Hillshire Farm® Ultra Thin Oven Roasted Turkey Breast in the fridge because turkey sandwiches are a classic lunch box staple.

Today I am going to show you how I use all of these products to survive that busy back to school time!

Dean has always taken Tyson® Fun Nuggets to school for lunch, pretty much everyday since kindergarten. He loves the dino shape and the taste and I love that they have whole grain breading and white meat chicken raised with no antibiotics ever so I know it’s a wholesome lunch for my kids!

I like to create a little dino theme for lunch sometimes and it is soo easy!! The Tyson® Fun Nuggets are already in the shape of dinosaurs so all I have to do is add some broccoli “trees” for the dinos to live in along with this cute little container of ranch for dipping.

I boil an egg and crack it and soak it in green food coloring before peeling to create a dino egg look.  Next I make some sugar cookies for a treat and stamp with a toy dino foot right when they come out of the oven to make these adorable foot print cookies my boys go crazy for!

Now if you have kids that are a little too old for dino nuggets (is anyone ever really too old for dino nuggets? lol) you can make these Turkey Bacon Ranch Sliders.  These are so easy to put together! I take slider buns and layer ranch dressing, microwave bacon, cheese (whatever is your favorite!) and then Hillshire Farm® Ultra Thin Oven Roasted Turkey Breast.  This is our favorite lunch meat! It is delicious and I love how thin it is.  I have always preferred my lunch meat shaved thin and this is perfect!  I also love that it too has no artificial preservatives, no artificial flavors, no nitrates/nitrates added (except those naturally occurring in celery juice powder and sea salt).

Back to school mornings are a madhouse around here, everyone is running around, backpacks are lost, homework is half done, and oh there’s a million papers I need to sign that they forgot to give me last night.  That is why I am always up for easy breakfasts and I love using my bento boxes again for breakfast.  I can throw a quick breakfast in their boxes and they can eat them whenever they are ready and if they don’t finish it can go with them in the car and they can finish it in the pickup/drop off line (because we all know that line takes forever!)  These Jimmy Dean® Sausage, Egg, & Cheese CroissantsJimmy Dean® Sausage, Egg, & Cheese Croissants are a family favorite!! Buttery croissants, fluffy egg, flavorful sausage and melty cheese, you can’t ask for a better breakfast.

Put a little yogurt and strawberries on the side and you have a full breakfast in just minutes, literally like 3 minutes, score!!

Now comes one of the hardest times during the back to school season, dinner.  Some nights between homework and finding matching clothes for the next day there just isn’t time for a lot of cooking and that is where Tyson® Crispy Chicken Strips come to the rescue!

I use them in so much, from topping salads, putting in wraps, making subs, topping pastas or just dipping in sauce, these are a time saver!  They are juicy and crispy and I always make sure to have a freezer full.  They are essential in making my favorite quick dinner that my whole family will eat.  Chicken Mashed Potato Bowls are comforting and filling, but best of all they are quick!! You just heat up some Tyson® Crispy Chicken Strips and place them on top of a bowl of mashed potatoes, then you add a bit of corn and then top the whole thing with chicken gravy, yum!! This is the perfect quick dinner after a long day, it’s like a relaxing hug in a bowl!

Of course on those really, really, really busy nights there is nothing quicker and more delicious than a good old State Fair® Beef Corn Dog.State Fair® Beef Corn Dog.  Perfection on a stick!

So soak up these last few days of Summer in peace knowing you have breakfast, lunch and dinner taken care of this back to school season with Tyson at Target!

Chicken Mashed Potato Bowl

Chicken Mashed Potato Bowl

Yield: 4

Ingredients

  • 8-12 Tyson Crispy Chicken Strips
  • 4 cups mashed potatoes, homemade or storebought
  • 1 cup chicken gravy, jarred, store-bought or homemade
  • 2 cups corn

Instructions

  1. Heat up the Tyson Crispy Chicken Strips according to bag directions.
  2. Meanwhile prepare your mashed potatoes.  I like to use refrigerated but this is a great recipe to use leftover mashed potatoes.
  3. Warm up the corn in microwave in 30 second intervals until warm.
  4. Warm up gravy according to package directions.
  5. Assemble your bowl!
  6. Place 1 cup of mashed potatoes down and top with 2-3 chicken strips. Sprinkle 1/2 cup of corn on top.
  7. Spoon 1/4 cup of gravy over everything.
  8. Serve!
