Hey guys! Have you been to Target yet? They have back-to-school stuff out!! I am so excited! I love back-to-school time. I love walking through the aisles with my kids and picking out new backpacks with the scent of pencils in the air. I love getting everything clean and organized for the new year. I think the biggest reason I love back to school is because it means fall is right around the corner—my favorite season!

I love getting all our school supplies at Target, and I found these adorable lunch boxes in their dollar spot—perfect for creating all the cute lunches I plan on making all year.

Over the years, I have found these bento-type boxes work best for Dean because they only get so much time to eat lunch. These boxes cut down on time spent opening a bunch of packages or baggies.

I picked up some yummy treats while shopping to make this DIY Mediterranean Pizza Lunch Box. I also picked up some lunch necessities like BARNUM’S Animals® Crackers, Danimals® Smoothie Drinks Strawberry Explosion and Kleenex® Wet Wipes- Gentle Clean. I always throw a bag of BARNUM’S Animals® Crackers in their lunch box as a great crunchy and sweet treat that I know my boys will love. Such a classic lunch box staple.

Something that is new that they love included in their lunch are these Danimals® Smoothie Drinks in their favorite flavor: Strawberry Explosion. These are great to toss in their bag with their lunch; they also love them for breakfast or as an afternoon snack. I love that they are made with no colors from artificial sources, flavors, or preservative ingredients and are now Non-GMO Project Verified.

One thing I make sure to always have plenty of when back-to-school season starts are these Kleenex® Wet Wipes Gentle Clean. I love to use them to wipe my hands with while I am prepping lunch boxes, and they are great to use before and after eating lunch or dinner. My boys cans just wipe their faces or hands and be on their way! They are so convenient! I keep them at home and in my purse for on the go!

Now, on to this delicious lunch!!

I use silicone cupcake liners to create a DIY Mediterranean Pizza. This way, the kids can assemble the little pizzas however they like—totally customizable!

So, I started by cutting some naan bread into little circles. You can use pita bread or mini naan bread. I tucked those into the box along with hummus, red peppers that I cut into stars, diced cucumber, and a little mozzarella cheese.

All the kids have to do is simply spread the naan with some hummus and top with cheese and veggies.

This is totally customizable to your kiddos taste. I used roasted red pepper hummus, but feel free to use plain or spicy—whatever kind your kids like. You can also switch out the cheese for feta and mix up the veggies to whatever your kids like; black olives would be fabulous on this!

I also packed along some pineapple chunks and of course, BARNUM’S Animals® Crackers and a Danimals® Smoothie Drink. This is a well rounded, flavorful lunch that I know my kids will love. And I loved packing it—so fun and cute!

I try to always send a cute note or funny joke in Dean’s lunch to give him a little chuckle or smile with his lunch! I try to make them fit in with that lunch’s theme. He loves puns right now so for this one, I would use a pizza pun like “You stole a pizza my heart” or a naan one like “You are second to naan.” He loves it!

Mediterranean Pizza Lunch:

  • 1 ancient grain mini naan or mini pita
  • 2 Tbsp. roasted red pepper hummus
  • 1/4 cup chopped red pepper
  • 1/4 cup chopped cucumber
  • 2 Tbsp. low-fat shredded mozzarella
  • 1/2 cup pineapple chunks
  • BARNUM’S Animals® Crackers
  • Danimals® Smoothie Drinks Strawberry Explosion

Ingredients

  • Mini naan or mini pita, or a large naan or pita cut into circles
  • 2 tbsp roasted red pepper hummus
  • 1/4 cup chopped red bell pepper
  • 1/4 cup chopped cucumber
  • 2 tbsp low-fat shredded mozzarella cheese
  • 1/2 cup pineapple chunks
  • Barnum Animal Crackers
  • Danimals Strawberry Explosion Smoothie

Instructions

    1. Place the hummus, cucumber, red bell pepper, cheese and pineapple in their own cupcake liners.

    2. Place everything in lunch box with naan bread.

    3. Include a package of Barnum Animal Crackers and a Danimals Smoothie!
