Ingredients

  • 2 (15 ounce) cans refried beans
  • 2 cups sour cream
  • 1 brick cream cheese, softened
  • 1 (1 ounce) packet taco seasoning
  • 2 cups Mexican blend cheese
  • 1 1/2 cups salsa
  • 1/4 cup sliced green onions
  • For the flag topping:
  • 6-8 Roma tomatoes, diced
  • 1 deli slice Jack or mozzarella cheese (for stars)
  • 1 ½ cups shredded monterey jack cheese (for white stripes)
  • 1 cup crushed blue tortilla chips

Instructions

  1.  In the bottom of a 9x13 baking dish spread the refried beans out evenly. 
  2. In a mixing bowl combine the sour cream, softened cream cheese, and taco seasoning until well mixed and layer on top of beans. 
  3. Next add the salsa layer.
  4. Next add the shredded mexican blend cheese and scallions.
  5.  Use a small 1 1/2 inch cookie cutter to cut out 5 stars.
  6.  Add crushed blue corn chips to the corner of the pan, then add stars.
  7. Beginning and ending with the tomatoes, rotate rows of chopped tomatoes and shredded cheese to form the stripes.
  8. Serve with chips!

  •  Store leftovers in an airtight container in refrigerator for up to 3 days.
  • You can use any flavor salsa you like. 
  • Add green chiles to the refried beans for a pop of flavor.
