These are the kind of cookies that disappear way faster than you expect them to.

I originally made these because I wanted something light and refreshing that felt different from the usual chocolate-heavy desserts we always seem to have around. And once I tasted one, I immediately knew these were going to become one of those recipes I make on repeat.

They’re soft, buttery, sweet, and full of fresh citrus flavor without being overpowering.

And the texture? That’s the best part.

They really do melt in your mouth.

The dough itself is incredibly simple, and I love that there’s no chilling involved because sometimes I just want cookies now without waiting around forever for dough to firm up.

The lemon cookies are bright and sweet while the lime ones have a slightly tangier flavor, and together they just look so pretty sitting on a tray.

The first time I made these, I set them out after dinner and figured we’d snack on them throughout the week. That definitely did not happen.

By the next evening, there were barely any left.  They have become my mom’s favorite cookie!

I even caught someone sneaking one before the glaze had fully set, which honestly told me everything I needed to know about how good they were.

These are the perfect spring and summer cookies, but honestly I make them year-round because they’re just so different from everything else.

They’re light, refreshing, easy, and always one of the first desserts gone anywhere I bring them.

FAQs

Why are they called meltaway cookies?

They’re called meltaway cookies because of their soft, delicate texture that almost melts in your mouth when you eat them. The combination of butter and powdered sugar helps create that signature texture.

Can I make these without food coloring?

Absolutely. The food coloring is completely optional and only used for appearance. The cookies will still have all the same lemon and lime flavor without it.

Why didn’t my cookies spread?

These cookies naturally don’t spread very much because the dough is thick and buttery. That’s why flattening them slightly before baking helps give them a more even shape.

Can I freeze these cookies?

Yes, these freeze very well. It’s best to freeze them before glazing. Once thawed, you can add fresh icing and they’ll taste just as good.

Can I use bottled lemon or lime juice?

You can, but fresh citrus juice and zest give these cookies a much brighter flavor. Fresh citrus really makes a difference in this recipe.
