Can I use any ground meat?
Yes, you could use ground beef, ground turkey, ground chicken, even ground pork. You could even use chicken breasts.
What should I serve this with?
We love making these tacos but it is also great as quesadillas, tacos, nachos, burritos or over rice for burrito bowls. I just serve a little salad or cheesy rice with it and dinner is done! It would also be great with some refried beans or black beans on the side. This is perfect with mexican rice.
Can I make these Slow Cooker Rotel Tacos spicier?
You can add red pepper flakes or sriracha to give this a kick. Add canned jalapenos, fresh jalapenos or more green chiles.
Ingredients used
- Ground Beef – I like to use lean ground beef for this.
- Taco Seasoning – Use your favorite packet of taco seasoning.
- Velvetta Cheese – I just use the orange kind but these would also be delicious with the white queso variety.
- Rotel Tomatoes – You can use the rotel brand or store brand tomatoes with green chilies, they are both fine.
- Milk – This just helps keep the sauce smooth.
- Tortillas – Any kind you like to make tacos with. You can use flour tortillas, corn tortillas or crunchy taco shells. You can even use this to make nachos over some tortilla chips.
- Taco toppings – You can use your favorite toppings lettuce, tomatoes, scallions, jalapenos, olives, guacamole, sour cream, salsa, shredded cheese.
How to make Slow Cooker Rotel Tacos

- Brown and drain your ground beef.
- Cut the velveeta cheese into cubes.
- Into your slow cooker add the ground beef, taco seasoning, cheese, can of rotel, and milk.
- Stir it together.
- Cover and turn on low for 3-4 hours.
- Serve in tortillas and top with your favorite taco toppings.
- Store leftovers in an airtight container for up to 3 days.

- 2-2.5 pounds lean ground beef, cooked and drained
- (1 ounce) envelope taco seasoning
- (16 ounce block) velvetta cheese
- (10 ounce) can Rotel tomatoes (tomatoes with green chiles)
- ¼ cup milk
- Tortillas
- Taco toppings
Instructions
- Brown and drain your ground beef.
- Cut the velvetta into cubes.
- Into your slow cooker add the ground beef, taco seasoning, cheese, Rotel, and milk.
- Stir it together.
- Cover and turn on low for 4 hours.
- Serve in tortillas and top with your favorite taco toppings.
