Hey guys!! So it is that time of year when the weather is chilly, and you are starting to have a lot more company. This time of year always brings get-togethers and lots of company and you need some good appetizer and dip recipes!
I find people love dips, they go crazy for them and this Baked Potato Dip is always a hit! Creamy mashed potatoes, sour cream, cream cheese, cheddar cheese, scallions and bacon all come together to create this quick and flavorful dip.
I love to serve it with crackers but it is also fabulous with tortilla chips, potato chips, or veggies.
Now one of my favorite appetizers is potato skins, they are so amazing but they can kinda be a pain to make. This dip has all the delicious flavors of potato skins but baked into a quick and delicious dip!
This recipe could not be more simple, I use refrigerated mashed potatoes to make this recipe come together in minutes. It is also a perfect way to use up leftover mashed potatoes. The holidays are coming up and this is a great way to use those leftover Thanksgiving mashed potatoes!
I like to top mine with bacon, green onions and cheese but feel free to get creative and add your own spin on this. Jalapenos would be so good on top of this dip!

How can I spice this up?
You can add some chipotles to the mix, top with chopped jalapenos or even add a little hot sauce or green chiles!
Can I make this ahead of time?
Sure!! I would make it all the way to the baking portion and throw it in the fridge! Then when your hungry guests are ready, just pop it in the oven and bake!
Can I use a different cheese?
Of course! Pepperjack would add a little kick and be so amazing with this dip. Any cheese you have on hand will

Ingredients Used
- Mashed potatoes – You can use leftover, make fresh or just use refrigerated ones.
- Sour Cream – A full fat or low-fat sour cream will both work here.
- Cream cheese – This helps this dip have a creamy base.
- Green onions – These add a lot of flavor and I love them in this dip.
- Shredded Sharp Cheddar Cheese – I like to use cheddar in this recipe but feel free to use your favorite cheese.
- Crumbled bacon – This is a great way to use leftover bacon (is there such a thing?) but you can also just use crumbled microwave bacon.
- Crackers – I like to serve this with crackers but you can also serve it with tortilla, potato chips or veggies.

How to make this delicious baked potato dip

- Heat oven to 350ºF.
- Mix potatoes, sour cream, cream cheese spread, 1 cup cheese, 3 slices bacon crumble, and half the onions; mix well.
- Spoon into 9-inch pie plate or skillet; sprinkle with remaining cheese and bacon bits.
- Bake 15 to 20 min. or until shredded cheese is melted and dip is heated through. Sprinkle with remaining onions.
- You can add a drizzle of sour cream on the top.
- Serve with RITZ Crackers.

Ingredients
- 1 1/2 cup mashed potatoes
- 1/2 cup - 1/2 cup Sour Cream
- 1/2 cup cream cheese softened
- 4 green onions sliced, divided
- 2 cups Shredded Sharp Cheddar Cheese
- 6 sliced cooked crumbled bacon
- RITZ crackers, serving size is 6 crackers
Instructions
- Heat oven to 350ºF.

Im not sure, I dont think potato freezes well or the other ingredients. It definitely can be made a little ahead and refrigerated
