Hey guys!! Woo it is warm out there.  Summer is surely here!  As much as I love cooking when it is a million degrees outside the last thing I want to do is turn on my oven or stove.  That is why so many of our summer dinners come from my trusty Crock-Pot® Slow Cooker.  I can just throw a few ingredients in there and dinner is ready for me without heating up my kitchen, I love it.

It is a pressure cooker which are all the rage right now and for good reason, it is amazing!! Everything comes out so quick and delicious, where has this been all my life!

But the best part is it’s not just a pressure cooker, this thing does it all!  The Crock-Pot® Express has 8 pre-set pressurized settings you can choose from and you can also choose to use it as a slow cooker.  You can also steam, brown, and sauté before programming which makes this a true one pot wonder.

I love the digital settings which make it easy to create tender meats and stews, hearty beans and chili, fluffy rice and risotto, and you can even make soups and desserts right in the The Crock-Pot® Express.

I can brown my roast and then pressure cook it and have dinner in no time or slow cook it for a dinner ready later.  It’s amazing, I am obsessed!

Now I cannot wait to use my Crock-Pot® Express all Fall and Winter to make stews and soups and roasts galore but right now it’s Summer and my family get togethers in the Summer are all about dips and I have the perfect dip for you to cook right in the Crock-Pot® Express.

This Cheesy Green Chile Chicken Corn Dip is always a hit and takes just minutes to whip up.

I pressure cook the chicken and cream of chicken with the green chiles and then shred it up (I use a hand mixer to make this even faster!)

Then I add in the sour cream, corn and pepper-jack cheese and use the saute feature to ensure all the cheese melts.

Thats it! This dip is done!  I serve it with tortilla chips and it flies off the table.  If I have any leftovers (and that’s a big IF) it is amazing over rice for dinner.

It is my favorite summer dip, just the right amount of kick from the pepper jack cheese, flavorful pops from the sweet corn and the whole thing is creamy and cheesy!  It is the best!

So this Summer head to Target and pick up a Crock-Pot® Express, it is great for Summer and I know I will be using it all year round!

Cheesy Green Chile Chicken Corn Dip

Ingredients

  • 2 boneless skinless chicken breasts
  • 1 can cream of chicken soup
  • 1 cup water
  • 7-8 ounces canned diced green chiles
  • 1 cup sour cream
  • 2 cups shredded pepper jack cheese
  • 1 can corn, drained

Instructions

  1. Place your chicken, water, cream of chicken soup and green chiles in the Crock-Pot® Express Crock Multi-Cooker.  
  2. Set to pressure cook for 10 minutes.
  3. Vent to release steam after 10 minutes.
  4. Remove chicken and shred.
  5. Add chicken back to Crock-Pot® Express Crock Multi-Cooker and turn to saute.
  6. Add the sour cream, corn and pepper jack cheese.
  7. Stir to melt cheese
  8. Serve with chips or over rice!
