These delicious Thanksgiving Egg Rolls are quick and full of flavor!

Everybody loves Thanksgiving dinner and the best part is the leftovers! But what do you do when you are tired of sandwiches? Make these Thanksgiving Egg Rolls!  These are delicious and my new favorite way to eat Thanksgiving leftovers.  Turkey, mashed potatoes, stuffing and cranberry sauce all fried up in a golden delicious egg roll wrapper then dipped in more cranberry sauce or gravy, amazing!! You will be more excited to eat these eggrolls than the Thanksgiving dinner itself! These can even be made in the air fryer.

There is nothing I love more than Thanksgiving dinner!  I love how all the dishes go so well together!  This is one meal where it is okay if everything is touching. I always make extra Thanksgiving dinner just so I can have plenty of leftovers. 

We always have plenty of sandwiches out of the leftovers.  Thick sandwiches stacked high with turkey, stuffing, cranberry sauce and a little mashed potato.  The flavors just go so well together. I saw you could take all those delicious Thanksgiving leftovers and make a crispy egg roll out of them and I was sold. 

These make for a delicious and quick lunch or dinner.  I know egg rolls don’t always sound like they will be fast and easy but I promise this is a really quick recipe and once you make them the first time you will be making them again and again!

I use leftover turkey, mashed potatoes, stuffing and cranberry sauce in these egg rolls. Everything gets rolled up into an egg roll wrapper and then quickly fried until golden brown and crispy. All your favorite thanksgiving food in one delicious egg roll.

These thanksgiving leftover egg rolls are a perfect way to use up those holiday leftovers.

I love that you can customize these how you like.  You can add any Thanksgiving leftovers you have.  You can add cheese if you like.  You can totally make these to your family’s taste. 

These can also be made in the air fryer if you don’t feel like pan frying the egg rolls. 

These turkey egg rolls are the most delicious way to use those delicious leftovers.  The juicy turkey, creamy mashed potatoes, savory stuffing and tangy cranberry work so well in these egg rolls.

These are always a hit and a perfect new way to use up those leftovers besides sandwiches.  I use cranberry sauce to make a cranberry dipping sauce or leftover gravy for dipping. I love this thanksgiving twist on egg rolls.

RECIPE FAQS

Can I use any Thanksgiving leftovers?

You can! Add that green bean casserole in there, leftovers veggies, ham, corn casserole, anything goes!

Can I add cheese?

Sure you can!  Swiss, mozzarella, cheddar and even pepperjack are all delicious in this.

What should I serve this with?

I like to serve this with leftover cranberry sauce or turkey gravy for dipping.

How can I air fry these?

Just prepare them as above but you will want to brush them with some vegetable oil before adding them in a single layer in the air fryer basket and fry at 400 for 6 minutes, flip and air fry another 6 minutes.  Air fryers do vary so make sure you are checking yours.

Ingredients

  • Eggroll wrappers –  I find these in the produce section of my store.
  • Thanksgiving turkey–  You can use any leftover turkey you have, light or dark meat works great. 
  • Leftover mashed potatoes – You could use sweet potatoes if that’s what you like. 
  • Leftover cranberry sauce –  Homemade, jellied or whole berry sauce are perfect here. 
  • Leftover stuffing – This adds such great holiday flavor to these egg rolls.
  • Vegetable oil –  For frying but feel free to use whatever oil you prefer.
  • Cranberry sauce or leftover gravy – For dipping!

How to make Thanksgiving Egg Rolls

  1. Start with an egg roll wrapper and place down a sixth of the mashed potatoes, then the turkey, then the cranberry sauce and finally the stuffing.  
  2. Using your finger dipped in water wet all 4 edges of the egg roll wrapper. 
  3. Roll up the egg roll wrapper starting with the long end and tucking the short ends in before finishing rolling up. 
  4. Repeat with the remaining ingredients.  
  5. In a large skillet over medium high heat, heat about an inch of oil.
  6. When the oil is heated add you egg rolls (you may have to do this in batches).
  7. Fry about 1-2 minutes per side until golden.
  8. When golden on both sides remove the egg rolls from the pan and drain off the grease. 
  9. Serve with more cranberry sauce or leftover gravy for dipping.
  10. Store leftovers in an airtight container for up to 3 days.

Air Fryer Instructions

  • Brush the egg rolls with oil and place in the air fryer seam side down. 
  • Airfry at 400 degrees for 8-10 minutes flipping halfway through.
