- Chicken tenderloins – You can use boneless skinless chicken breast or boneless skinless chicken thighs if you like dark meat.
- Vegetable oil – Any light oil for frying will work.
- Eggs – This is the base of the tempera breading.
- Corn starch – Corn starch is what gives the chicken bites their crispy coating.
- Sweet chili sauce- Use your favorite brand of sweet chili sauce.
- Ketchup- This makes a nice base for the sauce.
- Soy sauce- I like to use low sodium soy sauce to cut back on sodium.
- Brown sugar- This adds a little more sweetness and helps the sauce thicken.
- Scallions- I love green onions because they add such a great pop of flavor and color.
- Red bell pepper- You can use any color bell pepper you like but the red adds a nice color and sweetness.
- Pineapple chunks- I love adding pineapple chunks to this dish but you can omit them if you prefer.
How to make this Sweet Chili Chicken

- Cut your chicken tenderloins into bite size pieces.
- In a large bowl combine the 3 eggs and cornstarch.
- Add the chicken to the cornstarch mixture and stir to coat.
- In a large skillet over medium high heat up about an inch of oil.
- Once the oil is hot add the chicken in a single layer.
- Fry until brown on each side and cooked through.
- Remove the chicken to a paper towel lined plate.
- Repeat with the rest of the chicken.
- Discard the oil from the pan.
- To the pan add the chili sauce, ketchup, soy sauce, brown sugar, scallions, and red pepper.
- Cook over medium-high heat until thick and glazy about 5 minutes.
- Add the chicken and pineapple chunks.
- Toss to coat.
- Garnish with scallions if preferred.
- Serve over rice!
- Store leftovers in an airtight container for up to 3 days.

- 3 eggs
- Vegetable oil for frying
- 1 cup sweet chili sauce
- 1 tablespoon ketchup
- 1 tablespoon soy sauce
- 2 tablespoons brown sugar
- 3 scallions chopped
- 1 small red bell pepper, sliced
- 1 cup drained pineapple chunks
- Scallions for garnish
Instructions
