It’s that time of year where we put away the cookies and pie from the holidays and start focusing on healthy eating! The easier and tastier I can make living healthier the better. So I want quick and healthy meals that are filling and full of flavor, not boring.
So into Walmart I went in search of some better choices for lunch and dinners. I came across these delicious looking already grilled chicken strips and breasts from Tyson. I was super excited! I can just keep these in the freezer and add it to anything to pump up the protein and flavor in any dish keeping me satisfied longer!
When dinner time rolls around I want to eat something lighter than the enchiladas or fried chicken my husband wants but after fixing dinner for him and dinner for Dean there just isn’t a lot of time left to prepare something healthier for myself. Now with these Tyson Grilled & Ready breasts in my freezer a light and filling meal is only minutes away.
I usually just microwave a chicken breast or toss it in a pan to cook, since they are already previously cooked it takes no time to warm them through, then I can just add them to a big salad, a wrap, baked potato, anything!
Here are 3 of my favorite ways to use this flavorful, versatile chicken!
For these Grilled Chicken Cheddar & Broccoli Potatoes, I just microwave a potato till fork tender, warm up a Grilled & Ready Chicken Breast, lightly steam a little broccoli in a bowl in the microwave covered with a damp paper towel and mix the chicken and broccoli together with a little cheddar cheese and pop that into the baked potato. It is filling, delicious and so quick! I love these potatoes for lunch or dinner!
If I am craving Mexican food (which I always am) I just whip up these Grilled Chicken Fajita Skewers which use the Southwestern Strips so all the flavoring is already done for you. All I do is warm up the strips, place them on skewers with bell peppers and onions and grill them up for a few minutes, just enough to get some good color on the veggies. I then serve the skewers over a bed of corn and black beans and I have a fast, colorful dinner that satisfies all my cravings!
Now the quickest way I prepare these chicken breasts is to make Caprese Grilled Chicken. This takes minutes to make and is packed with flavor. While warming up a grilled breast I chop a tomato, a little garlic, a smidge of fresh mozzarella and few basil leaves. I combine all that in a bowl with a little salt, little pepper and sometimes a tiny drizzle of olive oil. When the breast is ready I just spoon the caprese salad on top and I have a light refreshing meal. I will often eat this along side a salad and I after that I am stuffed!!
