I love hitting the drive-thru and getting a Rodeo burger, they are so delicious!! The combination of bbq sauce, melty cheese and onion rings make the perfect burger. So I figured that flavor combo would make an amazing sloppy joe… and I was right!
To make it even better I make these sloppy joes right in the slow cooker! You can just put everything in the slow cooker and forget about it and have warm, flavorful sloppy joes for dinner in a snap.
Ground beef, onion, green bell pepper, bbq sauce and bacon come together to make a thick, rich sloppy joe that you top with crispy onion rings for a fabulous dinner! Inspired by those delicious rodeo burgers from the drive-thru.
Once the sloppy joe mix is all cooked it’s time to assemble the sandwiches! I like to get soft sesame seeds buns and pile on the meat, add some American cheese to melt and top with two thick onion rings. Give the sloppy joes a drizzle of extra BBQ sauce and dinner is ready!
You can serve these with french fries but they are also fabulous with tater tots or even just some plain chips. Put a pickle or some baked beans on the side and you will have one very happy family.
The combination of the bbq beef, melty cheese, crunchy onion rings and soft bun make the perfect crowd-pleasing dinner.
You can also make this on slider buns and take it to a potluck or get-together.

- To the slow cooker add cooked ground beef, cooked
bacon, onion, bell pepper, water, oatmeal, BBQ sauce and brown sugar. - Cook on low 4-6 hours.
- Assemble sandwiches with cheese, sloppy joe and onion rings.

Can I substitute the meat?
Of course, this will also work with ground turkey or ground chicken perfectly.
What else can I add?
You can add green chiles or jalapenos for kick, or even some garlic would be nice.
Can I freeze this?
Sure! Just mix all the ingredients that you would put in the slow cooker into a freezer bag or container and freeze for up to 3 months.

Slow Cooker Rodeo Sloppy Joes
Ingredients
- 1 1/2 pounds lean ground beef, browned and drained
- 8 slices cooked bacon, diced
- Small onion, diced
- Small green bell pepper, diced
- ¼ cup water
- 1 cup BBQ sauce
- 2 tablespoons brown sugar
- ¼ cup oatmeal
- 6 buns
- 12 frozen breaded onion rings, cooked to bag directions
- 6 slices American cheese
Instructions
1. Into your slow cooker add your cooked and drained ground beef, cooked diced
bacon, diced onion, diced bell pepper, water, oatmeal, BBQ sauce and brown sugar.
2. Stir to combine.
3. Cook on low 4-6 hours.
4. Add salt and pepper to taste.
5. Place a slice of cheese on the bottom bun and place your sloppy joe mixture on top. Top with 2 onion rings.
6. Serve!
Notes
Use your favorite bbq sauce, if you like it spicy add spicy bbq sauce.
You can add diced jalapenos to the mix before cooking for a kick.
You can use American or cheddar cheese, even pepperjack!
The oatmeal helps thicken the sloppy joes and you will never know it’s there!
