Like the rest of the world we’ve been obsessed with birria lately, and once I figured out how to make it in the slow cooker, it was game over. It is so easy!!

I never used to make birria tacos before because the ingredient list was super long but now that they have birria seasoning packets right in the grocery store, I make birria everything. 

The first time I made these, I was honestly just experimenting. I had a chuck roast in the freezer, a random pack of slider buns in the pantry, hungry kids and a serious craving for something comforting but a little different. We had had plenty of birria tacos so I thought why not try it in slider form? And now? It’s in regular rotation at this house.

These birria sliders are packed with that rich, spicy flavor and so delicious on those sweet hawaiian rolls. These are the perfect appetizer, lunch or dinner!

Substitutions:

I love to use stew beef for this because it cooks faster but you can use chuck roast, beef short ribs, brisket, chicken thighs or even pork shoulder. 

The sweet hawaiian rolls really add something to these sliders but you can also use small brioche buns, dinner rolls, or even little tortillas to turn it into tiny birria tacos.

Serving Suggestions:

These little sliders are already packed with flavor, but here are some of our favorite ways to serve these. 

These are perfect for dipping so don’t forget to save that cooking liquid and serve it on the side for dipping.

I serve this as sliders but you can also serve it on regular rolls or sub buns.

Frequently Asked Questions About This Recipe:

Can I use any sausage?

Yes, any sausage will work.  I like to use a beef/pork sausage but turkey sausage or chicken sausage also works great!  You can also spice it up and use an andouille or jalapeno sausage. 

Can I make this on the stove?

Yes you can actually make this on the stove or even in the oven.  Of course this would lower the cooking time. Just add everything to a large pan to cook it on the stove over medium high heat until thick and glazy.  For the oven combine all the ingredients and place in a 9×13 and bake at 400 until glazy, stirring frequently.

Ingredients used for this sausage recipe:

  • Stew beef-  I love to use stew beef because it gets nice and tender and cooks up quickly. 
  • Onion- I chop this up so it fits on the sliders easily. 
  • Garlic-  I just use the jarred kind but feel free to use fresh. 
  • Birria seasoning packet-  So glad this exists!! Makes this recipe so much easier!
  • Beef stock- You can use any stock you have on hand.  I do like to use a low sodium version. 
  • Hawaiian rolls- These sweet rolls really make the dish!
  • Colby jack cheese- Feel free to substitute any cheese you have on hand.  I think pepperjack would be great!
  • Butter-  You just need a little for the topping. 
  • Garlic salt- These adds a great flavor to the top of the sliders. 
  • Chopped parsley or cilantro- For topping the sliders. 
  • Cilantro, red onion, lime, jalapeno-  For garnish and topping, use your favorite!

How to make these easy birria sliders:

  1. To your slow cooker add the stew beef, onion, garlic, birria seasoning packet and beef stock.
  2. Slow cook on low for  4-6 hours until the stew beef is tender. 
  3. Shred the beef.
  4. Preheat your oven to 350 degrees.
  5. Slice the rolls in half place in a 9×13 baking dish.
  6. Add the cheese slices to the bottom half of the rolls.
  7. Top the cheese with the shredded beef and any toppings you like, cilantro, red onion or jalapenos. 
  8. Place the top half of the rolls on.
  9. In a small microwave safe bowl in 30 second intervals melt the butter with the garlic salt and parsley. 
  10. Brush the butter on the top of the rolls and bake for 12-15 minutes until the cheese is melted.
  11. Serve with the cooking liquid from the slow cooker for dipping and limes for squeezing.

How To Store:
Store leftovers in an airtight container in the refrigerator for up to 3 days.
