                                   This Shirley Temple Cake is such a delicious, light dessert!

 

Everyone loves a Shirley Temple and it is even better in cake form!  This cake is made with a cake mix and lemon lime soda.  Cherries are studded throughout this moist cake and a lemon lime glaze and cherries on top finish this beautiful and delicious cake.

 

There is nothing I love more an easy dessert and this cake is the easiest!  All you need is a cake mix and soda for the start of this delicious cake. 

 

I love how easy this cake is to make but it is so flavorful!  When I was little I remember ordering Shirley Temples when we would go out to eat and feeling so fancy with my little drink and this cake has all those classic flavors. 

 

Cake mix mixes with lemon lime soda and maraschino cherries to create this gorgeous cake.  The cherries add such a great pop of flavor and color in this cake.  Then the whole thing gets glazed with a lemon lime glaze and topped with cherries and lime zest. 

 

 

This is such a great cake for any time of year but I make it the most in the summer, something about the lime and cherries just say summer.  This cake is so light and fluffy and flavorful and easy you will be making it all the time.

Can I use any cake mix?

Yes, you can use white or yellow cake mix, you could even use lemon if you prefer.

Do I make the cake mix with the box directions?

No, you do not make the cake using the box directions.  This cake needs nothing added to it but the soda. There is no eggs or oil in this recipe. 

How to store this cake?

You can store this in an air tight container for up to 3 days.

Ingredients used

  • White or Yellow Cake Mix – Use your favorite either white or yellow cake mix. 
  • Flour –  This helps the cherries not sink to the bottom. 
  • Maraschino Cherries –  Make sure to drain and dry these so they don’t make the cake too wet. 
  • Lemon Lime Soda –  This is all you need to add to the cake mix for it to bake up nice and fluffy. 
  • Lemon Zest –  Adds a little flavor to the cake.
  • Lime Zest – Adds lime flavor.
  • Powdered Sugar –  This is the base of the glaze.
  • Lemon Juice – To help make the glaze.
  • Lime Juice – Flavors the glaze.
  • Heavy Cream or Milk – Thins out the glaze.
  • Maraschino Cherries with Stems –  For garnish.

How to make Shirley Temple Cake

 

  1. FULL RECIPE BELOW
  2. Preheat oven to 350.
  3.  Grease a bundt pan with cooking spray. 
  4. Toss the one cup of halved cherries with the 1 tablespoon of flour.
  5. In a large bowl, combine cake mix with the floured cherries, soda, lemon zest and lime zest.
  6. Stir gently to combine. 
  7. Pour the batter into your bundt pan.
  8. Bake 30-35 minutes until a toothpick inserted into the center comes out clean.
  9. Let cool slightly before inverting onto a cooling rack. 
  10. Cool cake completely. 
  11. Make the glaze by combining the powdered sugar with the lemon and lime juice and 1 tablespoon of cream of milk of needed.  You want a thick glaze.
  12. Pour the glaze over the cake.
  13. Garnish with more lime zest and cherries with stems. 
  14. Slice and serve!

  • 1 cup maraschino cherries, rinsed and halved
  • 1 (12 ounce) can lemon lime soda
  • Zest of one lemon
  • Zest on one lime
  • 3 cups powdered sugar
  • Juice of one lemon
  • Juice of one lime
  • 1-2 tablespoons heavy cream or milk
  • Maraschino cherries with stems, for garnish

Instructions

  • Store leftovers in the fridge for up to 4 days. 
  • Yes all you need to make the cake is the cake mix and soda, no need to add eggs or oil.
  • You can make the cake according to box directions and add the lemon and lime zest if you like. 
  • If you do not want to add cherries to the cake you can bake it and then poke holes in the cake and add the cherry juice into the holes. 
  • You can also bake this in a 9x13 baking dish.
