Nacho Hash Brown Casserole
Wandering through Wal-mart the other day trying to come up with a great dinner I spotted an Ore-Ida hash browns demo so I headed that way. They were doing a promotion for Disney’s Frozen and showing how you can make cheesy hash brown casserole and talking about great dinner recipes you can make with them. It got me thinking who says hash browns are just for breakfast? And then a flood of recipe ideas came flooding in. So I headed straight to the frozen food section and grabbed a bag.
I could think of a hundred great dinner ideas using them but I settled on this amazing Nacho Hash Brown Casserole.
I mean who doesn’t love nachos? And these are nachos with cheesy potatoes, so it is all sorts of yummy, cheesy, carby, nacho goodness you get to shovel in with fork, no sour cream covered fingers with this dinner! The best part is all the work is done for you! The potatoes are already prepped, you just add the other ingredients and throw them in the oven making dinner a snap for my hungry family. You can even serve it at that holiday party making holiday entertaining much easier and much tastier.
This hearty casserole is everything you love about nachos but instead of chips your toppings sit on a bed of nacho cheese potatoes and oh my it is sinfully good!
Serve this with all your favorite nacho toppings and your family will be blown away. You will look like a kitchen superstar all with the help of frozen hash browns!

Oh my goodness! This looks delish! (I’m on a potato kick lately, but my kiddo isn’t a huge fan! I think even SHE will like this!!) I know that Tater Tot Casserole is one of my favorites, but I LOVE this Mexican spin!

quick question, do you add water to the taco seasoning?
Oh sorry I missed that step. Yes just add the water like the directions on the taco packet call for (I do always add a little less though)
sorry, also are the potatoes frozen when you add it to the soup and sour cream?
Yes I use them frozen I usually drop the bag on the floor just to make sure they are all separated.

Hi Parrish, we just had this for dinner and the whole family loved it! Great flavor with the taco seasoning, and the hash browns were a nice surprise. One clarification though, I think the first step should say add 1cup of shredded cheese, right? I didn’t think you meant to add the beef to the potatoes..especially before it’s cooked. Thanks for sharing another yummy dish!
