Hey guys!! Halloween is right around the corner and my kids are excited!! I loved Halloween when I was a kid, running from house to house, cheeks red from the crisp fall air and excitement while you rang the doorbell waiting to see what goodies you would get. Shouts of trick-or-treat echoing down streets and the sound of plastic pumpkins full of candy banging against legs as they run down the sidewalk. I love it.
Now I have kids of my own and I love just seeing their excitement of trick-or-treating. It’s so fun getting them in their costume and helping them go from house to house. Afterwards we have a spooky dinner with a kid friendly Halloween movie on as we dump all the candy on the floor and sort through it.
This Halloween I wanted to do something a little different for dinner and came up with this Mummy Meatloaf. It looks like a mummy head thanks to strips of crescent rolls that bake onto a flavorful delicious meatloaf.
This meatloaf gets a ton of flavor from one of my favorite ingredients ever RO*TEL® Original Diced Tomatoes and Green Chilies. I always have plenty of RO*TEL® on hand because it is soo good in everything! Every time I at Walmart I pick up a can or three lol.
RO*TEL is my favorite way to add a little kick to any recipe. I can’t get enough of it’s bold, adventurous flavor. I love using it to make different dips too like my Spooky Spider Sausage Queso So don’t be afraid to Dare to Dip.

This dinner could not be more simple to make.
Just make the meatloaf adding in one can of drained RO*TEL® Original Diced Tomatoes and Green Chilies.
Form it into kind of a head shape.
I make a topping out of more drained RO*TEL® Original Diced Tomatoes and Green Chilies, a little brown sugar and BBQ sauce.
Then I bake it until it is almost done, then remove it from oven and add the crescent strips. I just use a can of crescent roll dough and tear them into strips of any size and lay them across.
I add black olives for eyes and you can add a green chile from the RO*TEL® to make the eyes pop.
Then back in the oven till golden brown!
My kids loved this! It was the perfect Halloween dinner and took no time to put together. It was so full of flavor thanks to the RO*TEL®.
Can I make these mini/individual?
Yes!! Those would so cute! Just cut the bake time down a little.
Can I use ground turkey?
Of course! You can use ground turkey or a meatloaf mix.
Serving ideas?
I like serving this with mashed potatoes of course but you can make those spooky by adding a little green or orange food coloring and olive eyes to look like little blob monsters or jack-o-lanterns.
I don’t have breadcrumbs! Help!
Don’t stress! You can use crushed up crackers or toast up some bread and crumble that up.
