Lime Brownies

Hey yall!  Though it is 10000 degrees outside and I’ve been avoiding the oven like the plague I was in desperate need of a baked treat.  Now I love a good, fudgy dense brownie (don’t bring those dry cakey brownies around here).  But I always feel like those rich decadent oh so chocolaty brownies just don’t feel very summery.

So of course my Lemon Brownies would be the answer right?  They are dense and tart and chewy and pure bliss, I would turn my oven on for one of those babies.

So I gathered up all my ingredients and reach in to grab some lemons……..and nope, no lemons.  Life did not hand me lemons this day (wah wah)  I did have a bag of limes.  Now that does sound summery and perfect.

So I grated those little green gems up, juiced em, mixed them into the batter and popped them into the oven.

While they were baking I whipped up a lime glaze that just put these Lime Brownies right over the top.

It was torture waiting for them to cool, although it’s so warm here I started to wonder if they would be able to cool lol.

Finally I sliced into them and it was heaven!  These are perfectly tart and sweet, dense, moist with a perfect glaze on top.  I told my family the recipe was horrible and they should stay away, thus leaving the whole pan to myself lol.

So back up brownies, outta the way lemon bars there is a new tasty treat in town and they are delicious!!

Lime Brownies

Lime Brownies

Ingredients

  • Brownies
  • 3/4 cup all-purpose flour
  • 3/4 cup granulated sugar
  • 1/4 teaspoon salt
  • 1/2 cup 1 stick butter, softened
  • 2 large eggs
  • 2 1/2 teaspoons lime zest
  • 2 tablespoons lime juice
  • Lime Glaze
  • 1/2 cup powdered sugar
  • 1 tablespoon lime juice
  • 2 teaspoons lime zest

Instructions

  1. Preheat oven to 350°F. Spray an 8-by-8-inch baking dish with cooking spray.
  2. Zest and juice two small limes.
  3. In the bowl of an electric mixer, beat the flour, sugar, salt, and softened butter until combined.
  4. In a separate bowl, whisk together the eggs, lime zest, and lime juice until combined. Pour into the flour mixture and beat at medium speed until smooth and combined.
  5. Pour into baking dish and bake for 25 minutes, or until just starting to turn golden around the edges and a toothpick inserted into the center of the brownies comes out clean. Allow to cool completely before glazing.
  6. When brownies are cooled completely, make the glaze by whisking together all three ingredients. Spread over the brownies cut into bars

Get in the kitchen, get to grating some limes, whipping up some glaze and soon enough you too will have a pan of luscious, dreamy Lime Brownies for yourself, and you don’t have to share either ;)

  5. Yum! Sometimes you just need a good baked treat, even if you have to turn on the oven to do it. These look so good, I pinned them to try once I make it to the grocery store for some limes. (Found you on the Weekend Re-Treat.)

  8. My mouth watered when I came across this recipe. And boy, do they taste amazingly sweet and tart. But I must have done something wrong because they did not rise at all and they feel very dense. Should I have added a levener? – Thank you.
