You just buy a big loaf of italian bread, make some slices in it and fill it up with caramelized onions, flavorful roast beef and melty provolone cheese. The whole loaf gets brushed with a seasoned butter before it’s baked to gooey cheesy perfection. I serve some beef consomme on the side for dipping and it is so good!

This is great for a snack, appetizer or light lunch. I serve this for lunch with a side salad and it is perfect but it also can make a great quick dinner with a little mac and cheese for the kiddos.

Can I use any roast beef?
Yes, you can use your favorite deli roast beef or even leftover roast beef works great. You can use presliced deli roast beef or pick up some at the deli. The Boar’s Head Roast Beef is fabulous in this.
Can I use any cheese in this french dip recipe?
Provolone is traditionally used in this bread but feel free to use your favorite cheese. I do find the sliced cheese works better than shredded so I would suggest using sliced over shredded. Mozerella, swiss, pepperjack or provolone will all work great in this.
Can I skip the onions?
Of course! I love the flavor of caramelized onions in this but feel free to skip them completely if your family does not like onions.
How should I store this?
This never lasts long in my house but if you have leftovers I would wrap them tightly and store in the fridge for up to 2 days and then reheat in foil in the oven.
Ingredients used
- Italian Bread Loaf – I love using the italian loaves from the bakery at the grocery store.
- Deli Sliced Roast Beef – Fresh from the deli is fabulous but I also used presliced from the refrigerated section at the store. It is going to be delicious with whatever roast beef you use.
- Provolone – Sliced provolone is traditionally used but feel free to use your favorite cheese. Sometimes I like to use swiss cheese.
- Onion – A sweet onion thinly sliced makes perfect caramelized onions for this.
- Softened Butter – Salted or unsalted works just fine here.
- Garlic Powder – To flavor up the butter.
- Dried Parsley – Adds a little flavor and color to the butter.
- Can Beef Consomme – For dipping. You could also use beef broth with a dash of worcestershire sauce and sprinkle of onion powder. You can also dip it in french onion soup.
How to make this French Dip Pull Apart Bread
- FULL RECIPE BELOW
- Preheat oven to 375 degrees.
- Slice about 10 slices into your bread, do not cut all the way through the bread!
- Place the bread on to a lined baking tray.
- Fold in half a slice of cheese and place into each slit in the bread.
- Place 2 slices of roast beef into each slice in the bread.
- Spoon some of the caramelized onion into each slice in the bread, optional.
- In a small bowl combine the softened butter with the garlic powder and dried parsley.
- Brush the loaf with the butter mixture.
- Pop the baking sheet in the oven and bake for 15 minutes until the cheese is melty and golden brown.
- Meanwhile mix the consomme with a can of water and warm up.
- Serve the bread with the consomme for dipping in au jus sauce.
- Refrigerate leftovers in an airtight container for up to 3 days.

- 14 ounce loaf italian bread, unsliced
- 7 ounces deli sliced roast beef
- 10 slices provolone
- Half of a small onion, caramelized (optional)
- 4 tablespoons butter, softened
- ½ teaspoon garlic powder
- ½ teaspoon dried parsley
- 10.5 ounce can beef consomme
Instructions
- Preheat oven to 375 degrees.
