This Creamy Cucumber Salad is so refreshing for summer and is a great way to use all those summer garden cucumbers. This flavorful salad combines thinly sliced cucumbers and onion with a creamy sauce made from yogurt, mayo, vinegar, sugar, dill and seasonings. This is going to be your favorite salad all summer long.
I love to start my garden in the spring so I can get all those delicious veggies all summer. Of course the one thing my garden is the best at growing is cucumbers!! So we always have an abundance of crisp cucumbers. That means I am always looking for ways to use them all up and this Cucumber Salad is one of my favorite refreshing summer side dish recipes.
We really love cucumbers any way we can get this but this is definitely one of our favorites. The cool, refreshing cucumbers pair perfectly with the creamy dill sauce. I love to add a little sugar and vinegar to my dressing which gives a little sweet and tangy. We also love to add a little onion but that is totally optional!
This is a really great recipe to take to cookouts and bbqs. There is no cooking so it’s perfect for the summer because it doesn’t heat up the kitchen and it goes perfectly with all sorts of cookout meals.
On those days that it is too hot to cook I love to make no cook dinners and this is always on the menu. You just can’t beat the delicious combination of those cool, crisp cucumbers and the sweet, tangy, creamy, dill dressing.

Substitutions:
You can substitue the red onion for yellow onion, scallions, chives or even leave them out all together!
If you are a garlic lover (and who isn’t?!) you can use some fresh minced garlic instead of the garlic powder.
If all you have on hand is dried dill, go ahead and throw that in, you just won’t need as much, add a little and then more based on your taste.

Yes, any cucumbers will work! You can use baby cucumbers all the way up to the long english cucumbers.
Can I make this spicy?
Of course! Just add a little red pepper flake or a good amount of cracked black pepper to add a little kick.
Can I make this ahead of time?
While you can eat the leftovers of this for a bit it really is best served right away since the cucumbers will continue to leech out liquid and turn the dressing watery. You can however make the dressing ahead of time and then mix it with the cucumbers right before serving.

- English cucumbers- You can really use any cucumber for this recipe. Try using baby cucumbers or whatever you have growing in your garden.
- Red onion- Make sure you slice this paper thin. You can also use scallions, chives or leave out the onion all together.
- Sour cream- This adds a tangy base to the dressing.
- Mayonnaise- Makes the dressing nice and creamy.
- Fresh dill- Fresh dill gives the dressing such a fabulous flavor. If you do not have fresh dill you can use dried dill but start with a teaspoon and go from there based on your taste.
- White vinegar- Adds a little tang to the dish.
- Sugar- Sugar adds just a touch of sweetness and balance to the dressing.
- Garlic powder- Just a little bit adds a great flavor to this cucumber salad. You can also use fresh garlic if you prefer.
- Salt and pepper- To taste
How to make this Easy Creamy Cucumber Salad:
- Wash your cucumbers and slice them thinly.
- In a large bowl, whisk together the sour cream, mayonnaise, dill, vinegar, sugar, garlic powder and salt and pepper to taste.
- Add the cucumbers and onions and toss gently to combine.
- Refrigerate for 1 hour before serving.
- Serve!
How To Store: Store leftovers in an airtight container in the refrigerator for up to 2 days. It may get a little watery because of the liquid from the cucumbers.

- 2 english cucumbers
- ⅓ of a small red onion sliced thin
- ½ cup sour cream
- 3 tablespoons mayonnaise
- ¼ cup chopped fresh dill, chopped
- 3 tablespoons white vinegar
- ½ teaspoon granulated sugar
- ¼ teaspoon garlic powder
- Salt and pepper to taste
Instructions
- Wash your cucumbers and slice them thinly.
- In a large bowl, whisk together the sour cream, mayonnaise, dill, vinegar, sugar, garlic powder and salt and pepper to taste.
- Add the cucumbers and onions and toss gently to combine.
