Can I use store-bought pie crust?

Of course! I’m always looking to make baking easier and I love to use store-bought crust as a time-saver instead of a homemade pie crust.  If you do use refrigerated pie crust you will need to use both rolls to make sure you have enough dough and kind of piece them together to cover the bottom and sides of the pie pan. 

Can I use pumpkin pie filling mix?

Nope!  There is a very big difference between pumpkin pie filling mix and pure pumpkin.  Costco uses a specific kind of pumpkin in their pies and I heard a rumor it is the same pumpkin they use in the Libbys brand pure pumpkin so that is what I use.  

Can I freeze this pie?

Of course!  Make sure you wrap this tightly or in a freezer-safe container and I would freeze it up to 2 months ahead of time after its bakes then just thaw it and serve!

Ingredients used for costco’s pumpkin pie recipe

Butter Pie Dough Recipe
  • Cold salted butter- I like to use salted butter for my pie crust recipe because it adds the perfect amount of salt to the buttery crust.
  • Flour-  You just need some good old all purpose flour for this easy crust recipe.
  • Sugar-  just a bit of granulated sugar is all you need to sweeten the crust up slightly.
  • Cold water- You need cold water or even ice water for this pie crust.

Filling-

  • Libbys Pure Pumpkin-  You need to pure pumpkin and not pumpkin pie filling.
  • Vanilla extract-  This adds a sweet vanilla flavor to the pie.
  • Pumpkin pie spice-  This where pumpkin pie gets all its flavor. 
  • Heavy cream- Heavy cream helps richen this pie and make it decadent. 
  • Evaporated milk-  I find evaporated milk just a bit sweet so this also helps make the pie sweet and creamy.
  • Eggs-  You need eggs to bind everything together in the pumpkin filling
  • Brown sugar-  Brown sugar deepens the flavor of this pie and helps it stay moist.
  • Granulated sugar-  And just a bit of white sugar to also help sweeten it.


How to make Costco Pumpkin Pie

FULL RECIPE BELOW

  1. Preheat your oven to 350 degrees.
  2. To make the crust in a large bowl add your flour and sugar.
  3. Grate in the cold butter and combine with a fork until pea size crumbs form. 
  4. Pour in the water and stir or knead the dough together until it forms into a ball.
  5. Roll out the dough and gently place into a 12 inch pie pan or pie plate
  6. Trim off any extra dough and crimp the edges of the crust with a fork. 
  7. Blind bake your pie crust by placing parchment paper on the crust, filling it with dried beans or pie weights and baking for 20 minutes.
  8. Remove and set aside to cool.
  9. For the filling in a large bowl combine the pumpkin puree, vanilla, pumpkin pie spice, heavy cream, evaporated milk, eggs, brown sugar and granulated sugar. 
  10. Use a hand mixer to combine all the ingredients until your pumpkin mixture is smooth. 
  11. Pour the filling into the pre-baked pie crust and bake pumpkin pie for 55-60 minutes or until the middle is just slightly jiggly.
  12. Remove from the oven to cool.
  13. Once the pie is cool place in the refrigerate to chill for at least 2 hours.
  14. Serve with whipped cream.
  15. Cover leftovers with plastic wrap or in an airtight container and store for up to 3 days.

    Ingredients

    • Crust-
    • 2 sticks (1 cup) cold salted butter
    • 2 ½ cups flour
    • 1 tablespoon sugar
    • ½ cup cold water
    • Filling-
    • 22.5 ounces Libbys Pure Pumpkin (this is one and a half 15 ounce cans)
    • 3 teaspoons vanilla extract
    • 3 teaspoons of pumpkin pie spice
    • 1 ½ cups heavy cream
    • ¾ cup evaporated milk
    • 5 eggs
    • 1 cup brown sugar
    • 6 tablespoons granulated sugar

    Instructions

    1. Preheat your oven to 350 degrees.

    Notes

  • Store leftovers in an airtight container in the refrigerator for up to 3 days.
  • You can use any pure pumpkin you like but Costco does use a puree that uses the same kind of pumpkin Libbys uses.
  • You can use cinnamon instead of the pumpkin pie spice. 
  • You can use the leftover pie dough to cut out shapes to bake on top of the pie. 
  • You can also use store bought pie crust but you will need to use 2 crusts pieced together to fit into the 12 inch pan.
