Cheesy Enchilada Skillet Stack

Hey guys!!!  Today I want to share with you maybe my most cheesiest dish ever!!  We love Mexican inspired dishes at our house, we go beyond Taco Tuesday.  I swear I could eat Mexican every night!

Of course most of the yummiest Mexican dishes are cheesy, maybe that is why it is my favorite cuisine lol.
So for all my cheesy Mexican recipes I make sure to keep a big bag of Sargento® Fine Cut Shredded 4 Cheese Mexican blend.  It is my favorite cheese to use in tacos, casseroles, quesadillas, nachos, you name it!  I love that I do not have to pull out my grater to get that off the block taste because Sargento® has me covered.

Their Fine Cut Shredded 4  Cheese is so delicious and smooth and creamy and it really brings the Mexican flair to my dishes.  When I am in the kitchen making our favorite pork tacos, or my fajita quesadillas I want big cheesy flavor but I HATE grating cheese so I am so happy that my dishes get that off the block freshness with Sargento®.

Since we cook with cheese so much I always pick up plenty of Sargento® Fine Cut when I am doing my weekly shopping at Kroger.  Kroger always has a great selection of any flavor Sargento® cheese I am craving.

Now let me give you an incredibly easy recipe to use some of that delicious cheese in with my Enchilada Skillet Stack.

This could not be an easier or more delicious dish.  It is perfect for a meatless Monday dinner or you can add chicken or ground beef and bump up the protein.

So I just start by putting a little red enchilada sauce in my skillet (green sauce would also be fabulous here!).

Next I spread a tortilla with plenty of refried beans.

Then I pile on the cheese!!  You can’t add to much cheese, I promise!

Next comes a little sprinkling of green chiles.

And then I repeat with 2 more tortillas.

I take the last tortilla and top it with more red enchilada sauce and ton more cheese.

More Cheese

Into the oven at 400 for 15-20 minutes and out comes a glouriously cheesy skillet stack!

I sprinkle on some green onions and dinner is served in less than 30 minutes!

You can customize this however you want, you can add corn or meat, do green sauce instead of red, add in some roasted veggies, the sky is the limit with this stack.
