Candied Bacon Pork Loin

Candied Bacon Wrapped Pork Loin 

I concocted this one up myself about a year ago and it has become a family favorite.  Honestly though anything wrapped in bacon is always a hit lol.  This recipe is so simple and tasty we had this year for Christmas Eve dinner.  You MUST serve homemade mashed potatoes with this meal as they make the perfect vessel for the amazing gravy the roast makes.  It is a perfect comforting meal that I’m sure you will be in love with too.

Ingredients

    • One Half Pork Loin Roast

 

    • One Package of Bacon (thinner cut is best for this recipe)

 

    • Between ½  and 1 cup of Brown Sugar

 

    • 2-4 Tablespoons Honey Dijon Mustard

 

Directions 

Trim the fat off the roast.

Layer the whole package of bacon evenly across the roast (wrap the roast in bacon basically).

Mix the mustard and brown sugar in a bowl together with a touch of pepper.

Place the roast seam side up on a baking rack that has been placed in a pyrex baking dish.

Pour ¼ cup of water in bottom of baking dish.

Smear half the mustard mixture all over the roast taking care not to remove any bacon.

Place in 400 degree oven and bake until bacon is brown and crispy on top and then remove from oven, flip roast over, smear the rest of the mustard mixture on and pop back in oven until the top is caramelized and pork is cooked through.

Remove roast from pan and let it rest while you prepare the gravy.

Pork Roast Gravy

In a medium sauce pan melt 2-3 T of butter and whisk in 2-3 T of flour making a roux.  When the mixture is all incorporated add a little pepper and the drippings from the roast pan.  Whisk all together until smooth and thickened.  Pour over sliced roast and mashed potatoes and enjoy!
