I am obsessed with poke cakes!!!  What is easier and tastier than a deliciously moist cake that is creamy and cool and can be made 1000 different ways?!?

Now that the weather is getting warmer and there are potlucks to attend and BBQs to throw the poke cake becomes a staple around here.  They are so easy to make and travel beautifully making it the perfect go to dessert in the warmer months.

Since there are probably a thousand and one different varieties or more I thought I would share with you some of my favorites and some amazing ones I stumbled across.

Now the premise of the poke cake is simple, cake baked in a 9×13, poked full of holes, topped with pudding or jello, then covered in whipped cream.  Easy peasy and as you can see so easily customizable.

You can choose any cake mix, any jello flavor, any pudding flavor and go crazy with the toppings.

So pick one, make it and enjoy or better yet come up with your own poke cake creation and let me know what you flavor combo you created!
