Hot Chocolate Cupcakes with Marshmallow ButterCream
Hey guys!!! Goodness it is getting chilly out there!! It is also getting super close to the holidays! I cannot wait! I also cannot stop making cute holiday treats!
Does anyone else get a severe case of the baking bug once the holiday music starts up?
This week for our Christmas Dessert Series I made these adorable little Hot Chocolate Cupcakes with Marshmallow Buttercream. The batter is a brownie batter made with hot chocolate packets to give that authentic hot chocolate flavor we all know and love.
Of course you cannot have hot chocolate without marshmallows!! So a delicious marshmallow buttercream tops off these beauties!
They are amazing!! It tastes just like your favorite winter warm up drink but oh so much more!
I love to make these in these tiny mason jars, you can bake any cupcake or brownie recipe right in these little jars which actually makes them perfect for gifting!
I topped my cupcakes off with a paper straw and snowman marshmallow and they were almost too cute to eat…almost!!
My family loved them and they were gone in no time. I know these will definitely have to make an appearance on our Christmas Eve dessert platter!

Hot Chocolate Cupcakes with Marshmallow ButterCream
Ingredients
- 1/2 cup hot chocolate mix
- 1/2 cup butter
- 1 cup sugar
- 2 eggs
- 2 tablespoons vanilla extract
- 1/2 cup flour
- Marshmallow Buttercream
- 2 cups butter, softened
- 2 1/2 cups confectioners' sugar
- 1 13 ounce jar marshmallow creme

Instructions
- Preheat oven to 350 degrees.
- Melt butter. Stir in hot chocolate mix. Add the sugar.
- Slowly mix in the eggs and vanilla.
- Fold in the flour.
- Mix until well combined.
- Pour into individual 4 oz mason jars placed on a cookie sheet.
- Bake for 25 minutes.
- Cool.
- Marshmallow Buttercream
- Cream butter in a mixing bowl with an electric mixer on medium until butter is soft and fluffy. Gradually beat in confectioners' sugar, about 1/2 cup at a time; beat in almond extract. Gently fold the marshmallow creme into the frosting until thoroughly incorporated.

Oh my gosh! These are too good to be true. I have to confess, I don’t have a huge sweet tooth, I’m more of a salty craving girl. So I don’t freak out about cupcake recipes all that much.
