Yes, you can use dill pickles, bread and butter pickles, sweet pickles, garlic pickles, spicy pickles, or a mixture! All of these would be fabulous with this pasta salad.

Can I use any potatoes in this creamy potato salad?

You can definitely use any type of potatoes you like.  I like to use russet potatoes but baby potatoes work just as well.

Can I make this spicy?

You can add red pepper flakes or jalapenos. You can even add a dash of hot sauce to the dressing.

Ingredients used in this delicious dill potato pasta salad

  • Potatoes- I like to use russet potatoes for this but you can use any potatoes you like.  If you use small red potatoes, yukon gold potatoes, yellow potatoes or any thin skin potatoes you don’t have to peel them.
  • Mini dill pickles- I like to use the mini pickles but you can use any pickles you like.
  • Red onion- Red onion is perfect in this salad but you can use white onion,
    yellow onion, scallions or even leave out the onion if you don’t like it. The green onions make for a more subtle onion flavor.
  • Mayonnaise- Use a good quality mayo here, I prefer Duke’s
  • Hardboiled eggs-  I love hard-boiled eggs in my potato salad.
  • Pickle juice- The dill pickle juice adds tons of pickle flavor to this potato salad.
  • Yellow mustard- I prefer yellow mustard in my potato salad and the yellow mustard goes great with the pickle flavor. You can also use dijon mustard if you like.
  • Celery seed- You could always use fresh celery but I always use celery seed in my potato salad.
  • Paprika- This adds a pop of flavor and color.
  • Fresh dill-  Adds the perfect pickle flavor and freshness to the dressing. 

How to make this dill pickle potato salad recipe

  1. To a large bowl add your boiled potatoes, red onion, sliced pickles and boiled eggs.
  2. In a mixing bowl whisk together the mayonnaise, pickle juice, mustard, celery seed, paprika and fresh dill.
  3. Gently toss the sauce with the potatoes until all coated.
  4. Cover and refrigerate at least 4 hours. 
  5. Garnish with a sprinkle of paprika.
  6. Serve!
  7. Store leftovers in an airtight container in the refrigerator for up to 4 days.

    Ingredients

    • 3 pounds of potatoes, peeled, diced, boiled
    • ½ small red onion, sliced
    • 1 cup sliced mini pickles
    • 4 hard boiled eggs, chopped
    • 1 ½ cups mayonnaise
    • ¼ cup pickle juice
    • 2 tablespoons yellow mustard
    • ½ teaspoon celery seed
    • ½ teaspoon paprika (plus more for topping)
    • 2 tablespoons fresh dill

    Instructions

    1. To a large bowl add your boiled potatoes, red onion, sliced pickles and boiled eggs.
    1. In a mixing bowl whisk together the mayonnaise, pickle juice, mustard, celery seed, paprika and fresh dill.
    2. Gently toss the sauce with the potatoes until all coated.
    3. Cover and refrigerate at least 4 hours. 
    4. Garnish with a sprinkle of paprika.
