Mini Lasagna Bites

Hey guys! Today I want to share with you a delicious little bite perfect for all those Award Show parties coming up. We just got done with all those football parties and now time to move on to the award shows, my favorite!!
If you are going to have an awards party you have to have great food, something a little more upscale than chips and dip.
I like to serve little bites of food that are not only delicious and look fabulous but are easy to make. No one wants to get stuck in the kitchen and miss who won!
These Mini Lasagna Bites are the perfect snack for your party! So full of flavor in a little handheld bite your guests won’t be able to resist picking up.
These are so easy to make since you use premade fillo cups and it they get a huge punch of flavor from the sausage. The sauce is simple and delicious because I only use Hunt’s® Original Diced Tomatoes to give the sauce a fresh flavor, yum!
I always keep Hunt’s® Diced Tomatoes on hand because not only are they delicious and can help me get in and out of the kitchen in a snap but instead of using chemicals to peel their tomatoes Hunt’s® peels their tomatoes using FlashSteam which is just steam from hot water. So I know there are no chemical by-products on my tomatoes. Also I love that Hunt’s® cans their diced, whole, stewed and crushed tomatoes within hours after harvest, so I know we are getting the freshest tomatoes, yum!
Speaking of veggies, the 2015 Dietary Guidelines for Americans recommend consuming 2.5 to 3 cups of vegetables a day, a goal almost 9 out of 10 Americans are not meeting. New research presented at The Obesity Society’s annual meeting found adding tomatoes to your meals and snacks can be an easy way to include more vegetables in your diet and get closer to USDA’s MyPlate recommendations.
Okay back to these yummy little Lasagna Bites! The recipe is so simple and I got it from Hunt’s® site where you can find tons of delicious recipes make with Hunt’s fabulous and fresh tasting tomatoes.
Flavorful sausage gets browned up and mixed with Hunt’s® Diced Tomatoes with a few seasonings.
Next into the mini fillo shells the meat mixture goes.
Next top each one with a dollop of ricotta.
A sprinkle of mozzarella before popping them into the oven completes the dish.
Once baked garnish with a little oregano and you have a gorgeous dish to serve to your party guests and it took no time at all!
These look so fancy served up and of course taste amazing! Everyone will want to come to your award show party just for the food!
Mini Lasagna Bites
Ingredients
- 1/2 cup part-skim ricotta cheese
- 2 tablespoons water
- 1/8 teaspoon ground black pepper
- 8 ounces Odom's Tennessee Pride® Hot Country Sausage
- 1/4 cup finely chopped yellow onion
- 3/4 cup Hunt's® Diced Tomatoes
- 1 clove minced garlic
- 1 tsp italian seasoning
- 2 pkgs, 1.9 oz each frozen mini fillo shells
- 1/3 cup shredded part-skim mozzarella cheese
- Chopped parsley, optional

Instructions
- Preheat oven to 350°F.
- Stir together ricotta cheese, water and pepper in small bowl; set aside.
- Heat large skillet over medium-high heat. Add sausage and onion; cook 5 minutes or until sausage is crumbled, stirring occasionally.
- Drain; stir in tomato sauce, garlic and seasoning.
- Place fillo shells on large shallow baking pan. Divide meat mixture evenly between fillo shells; spoon ricotta mixture on top of meat.
- Sprinkle with mozzarella cheese.
- Bake 15 minutes or until hot and cheese melts.
- Sprinkle with parsley, if desired.
