Can I use any cake mix?

Yes, any light cake mix will work, white cake mix, yellow cake mix, lemon cake mix or french vanilla cake mix.

Can I freeze this?

You can!  This cake actually freezes well.  Just assemble it as directed and cover tightly with plastic wrap and foil.  Freeze for up to 3 months.  Just thaw completely and serve.

Ingredients used for this easy key lime poke cake

  • Box of white cake mix-  Any brand will do, you can also use yellow cake mix if you prefer. 
  • Vegetable oil- This helps create a moist cake. 
  • Eggs-  For making the cake rich. 
  • Limes-  you need lime zest for the cake and also lime wedges for garnish. This adds great
    lime flavor.  I also use the limes for lime peel twists to garnish the top. You can use regular limes or key limes.
  • Sweetened condensed milk- This creates the filling that goes inside the holes.
  • Whipping cream- This keeps the filling light and fluffy.
  • Key lime juice- You can use fresh or bottled and it can be regular lime juice or key lime juice.
  • Whipped topping- Like cool whip to top the cake with.  It is a light creamy topping perfect for this refreshing cake. 
  • Jar maraschino cherries– For garnish. 
  • Neon green food coloring- This is just to add a little more green color to the filling.

How to make Key Lime Poke Cake

 

  1. FULL RECIPE BELOW
  2. Preheat your oven to 350 degrees.
  3. Grease a 9×13 baking dish. 
  4. In a large bowl whisk together the cake, mix, eggs, water and oil the box calls for.
  5. Pour batter into the prepared pan. 
  6. Bake 25-30 minutes or until toothpick inserted in center comes out clean. 
  7. Cool slightly.
  8. Using a large straw or handle of a wooden spoon poke holes all over the cake. 
  9. In large mixing bowl using an electric mixer whisk together the sweetened condensed milk, lime juice, whipping cream, lime zest and a few drops of green food coloring. 
  10. Pour filling all over cake using a spoon to get the filling into all the holes. 
  11. Spread the whipped cream evenly over the top of the cake. 
  12. Garnish with more lime zest and lime slices.
  13. Refrigerate at least 1 hour.
  14. Slice and serve! 
  15. Store leftovers in an airtight container for up to 3 days.

  • 1 box 15.25 ounce white cake mix
  • Eggs, oil and water your cake mix calls for
  • 1 can (14 oz) sweetened condensed milk
  • ¾ cup whipping cream
  • ½ cup Key lime juice
  • 1 teaspoon grated lime peel
  • Neon green food coloring
  • 1 (8 ounce) container whipped topping
  • Lime zest and slices for garnish

Instructions
