Caesar Chicken Salad and Strawberry Basil Iced Tea

Hey yall!! I want to talk to you a little about tea time around here. Being southern there are 2 staples you need to make any meal perfect, iced tea and mayo. I mean you need mayonnaise for everything yummy deviled eggs, pimento cheese, potato salad and the list goes on and on. And iced tea? Well that stuff just runs through our veins here.
My grandma and I have birthdays 2 days apart and this year I want to make a little light lunch for us girls before a full day of power shopping. My grandma is known for her delicious chicken salad on croissants and I wanted to jazz up chicken salad for our special lunch.
So I headed to Walmart for supplies and hit the coffee/tea aisle to grab some Lipton and scooped up this 100 count box because again we go through it around here pretty fast.
Then I needed that chicken salad staple mayonnaise and grabbed Hellman’s, the good kind because it makes a huge difference!
Once at home I got started prepping. Boiled up a pound of chicken breast, shredded it.
Mixed it with the mayo, a little Caesar dressing and parm and placed it on mini croissants with a few leaves of baby spinach and man did they look like the perfect little dainty sandwich!
Of course we needed iced tea to pair perfectly with our sandwiches but since this was a special occasion we need some special iced tea!! Strawberry Basil Iced Tea was wonderfully refreshing and paired beautifully with the chicken salad.
All I did was make a batch of regular sweet iced tea and add in some sliced strawberries and few leaves of basil and it was heaven in a mason jar!
This light lunch was the perfect treat to kick off our birthday shopping trip and it was enjoyed by all the ladies.
So next time you want to make a special lunch for you and your friends just make these tasty little sandwiches and a big pitcher of this iced tea and you will have one incredible meal!
