Summer is here and that means tons of birthdays and get togethers around here, it also means I need to whip up some summer recipes.  I wanted to kick of the summer right by welcoming it in with a big party for our family and friends.   Of course when it comes to feeding a crowd you want something simple that stretches far and pulled pork is just that.  Nothing is easier than letting your slow cooker do the work for you!

While shopping in Walmart for ingredients for the party I was on the lookout for some inspiration to take my pulled pork to another level.  Then I came across the great selection of Hunt’s products and all the great flavors they had and I knew I could use their Sweet Onion variety for BBQ Pulled Pork Tacos and the Fire Roasted kind for a Coleslawsa to top the the tacos with.   Hunt’s helps cut down on my kitchen time immensely.  I don’t have to bother with chopping a bunch of tomatoes and onions when I’m in a rush and I love that I can get that fire roasted tomato flavor for my salsa just by opening a can.

I always love cooking with Hunt’s because the tomatoes taste so fresh and you can taste the quality due to their unique flashsteam peeling method.

The night before the party I gathered up all my ingredients and prepared to make some amazing BBQ Pulled Pork.

The Hunt’s Sweet Onion added such a great onion flavor to the dish without being overpowering and the sauce gave the pork that bbq depth I was looking for.  I shredded it and it was ready for the party.

Now of course tacos are topped with salsa and pork bbq is topped with coleslaw so naturally mixing the two for these tacos was perfect.  Hunt’s Fire Roasted tomatoes gave my salsa all the flavor it needed.

Mixed with my favorite coleslaw this “Coleslawsa” was a delicious hit.

BBQ Pulled Pork Tacos with Coleslawsa #EasyCooking

Ingredients

  • ~Pulled Pork~
  • 3 pound sirloin pork roast
  • 1 can Hunt's Sweet Onion Diced Tomatoes
  • Half a can of Hunt's Tomato Sauce, just eyeball it
  • 1 teaspoon smoked paprika
  • 1 teaspoon regular or sweet paprika
  • 1 teaspoon salt
  • 1 teaspoon pepper
  • 1 teaspoon red pepper flake
  • 1 tablespoon mustard
  • 1 tablespoon Worcheshire Sauce
  • 2 tablespoons vinegar
  • 2 tablespoons brown sugar
  • ~Salsa~
  • One jalapeno seeded and sliced
  • 1/4 of a medium onion sliced
  • One can Hunt's Fire Roasted Diced Tomatoes
  • Clove of garlic
  • 1/4 t sugar
  • ~Coleslaw~
  • 1 pound coleslaw mix
  • 2/3 cup mayonnaise
  • 1/4 cup sugar
  • 2 tablespoons vinegar
  • 1/2 teaspoon salt
  • Sprinkle of pepper
  • Sprinkle of celery seed
  • ~Coleslawsa~
  • Prepared Coleslaw
  • Prepared salsa

Instructions

  1. ~Pulled Pork~
  2. Mix all ingredients except for pork in mixing bowl.
  3. Place pork into slow cooker.
  4. Pour sauce mixture over pork.
  5. Cook on low 6-8 hours.
  6. Shred and return to sauce till ready to serve.
  7. ~Salsa~
  8. Blend all ingredients in food processor until desired consistency.
  9. ~Coleslaw~
  10. Mix dressing ingredients and add to coleslaw mix.
  11. ~Coleslawsa~
  12. Mix coleslaw and salsa together! Super easy!

  1. I am heading out for the mountains this weekend to sleep under the stars. This recipe looks like a great one for outdoor cooking. Instead of the slow cooker I am going to pop it in my Dutch Oven and let it sit in the coals. Thanks for the great idea. One more thing I can check off my list!
