BBQ Chicken Panini
Dean has been keeping me on my toes and exhausted lately so I have been trying to make quick and simple meals as he chooses the time I’m cooking dinner to act up the most. Tonight I made BBQ chicken paninis and they were awesome and very filling. I have a panini maker and it is amazing and I love it, it also is great for making quesadillas too. If you do not have a panini maker you can make this just in a frying pan like you would a grilled cheese but either way these are a must try!
Ingredients for 4 sandwiches
- 2 Boneless Skinless Chicken Breasts
- 1 Bottle BBQ Sauce (any kind)
- 8 Slices Cheddar Cheese or Pepperjack Cheese
- 1 bag Frozen Onion Rings (I used the all natural Alexia ones)
- 8 Slices Potato Bread (or whatever bread you prefer)
- Mayo
In a pot put half the bottle of BBQ sauce and the 2 chicken breasts, cover and cook till chicken is cooked through.
Bake onion rings according to directions.
Put chicken in a bowl, shred with 2 forks and add rest of BBQ sauce.
Put a thin layer of mayo on one side of each slice of bread.
Lay 4 slices of bread mayo side down.
Put a slice of cheese, a quarter of the chicken, 4 onion rings and another slice of cheese on the bread and top with the second slice of bread.
Put in the panini maker or in a frying pan and cook till brown and cheese is melted.
