Apple Pie Bread Pudding

There is nothing more comforting and embodies Fall more than this Apple Pie Bread Pudding!
Guys! I am so excited!! It is officially Fall! I get way too excited this time of year.
I love the that the days are shorter, bringing us earlier evenings filled with crisp air, crunchy orange and red leaves swirling down from the trees, and cool breezes perfect for sitting on the porch with a quilt and warm apple cider.
Here in the South we fully embrace Fall. We do fire pits with S’mores, all the houses have big old orange pumpkins on the steps, scarves and boots, we do it all.
But if there is one thing us Southern girls do best in the Fall it’s cook!
Now is the time we start making our chicken and dumplings, chicken pot pies, vegetable soups (which though called vegetable soup still has 2 different kinds of meat lol), we make huge amount of chili and cornbread, we do it right!
I could not imagine making my chili and apple pie on that first brisk night in October without Luck’s Beans and Luck’s Fruit.
These are staples in my family, they are a staple in the South with culinary roots here bringing that signature Southern taste to all our family favorite dishes! Luck’s has high standards and have been delivering premium quality beans and fried peaches since 1947. I know my family has been cooking with them for as long as I can remember. There are always several cans in my Grandma’s pantry.
I love cooking with them because they are a brand I love and have always used but also because they are just so easy and convenient! I do not like peeling fruit so Luck’s Canned Fruits save me there! I love how their Fried Apples still have their bite to them and aren’t mushy, which makes them perfect for recipes.
It was chilly this weekend and I just could not wait to get in the kitchen and bake something warm, comforting and something that would fill my house with the warm scent of cinnamon.
My Grandma makes the most amazing bread pudding, it is fabulous. It is one of her Southern recipes passed down from generation to generation, and while I’m not sharing that super secret recipe today it did inspire me to create a Fall bread pudding.
Nothing says Fall like apple pie! So of course I put two and two together and created this Apple Pie Bread Pudding.
Apple Pie Bread Pudding
Ingredients
- 6 medium croissants
- 2 cans Luck's Fried Apples with Cinnamon
- 3 eggs
- 1/2 cup milk or cream
- 1/2 teaspoon cinnamon
- 1/2 teaspoon vanilla
- Brown sugar for topping
- Caramel optional
Instructions
- Preheat oven to 350
- Grease an 8x8 pan
- Rip up your croissants and place in dish
- Add in the 2 cans of Luck's Fried Apples
- Gently combine
- Mix the eggs, milk, cinnamon, and vanilla together in separate bowl.
- Pour egg mixture over apple mixture
- Bake for 25-30 minutes
- Halfway through baking time you can top with a sprinkle of brown sugar for color
- When baked through, let cool slightly and top with ice cream and caramel, yum!!

It is so fabulously Fall! The warm, fried apples mixed with buttery croissants in a bread pudding that is out of this world.
Of course before serving it would only be right to top this with some ice cream and drizzle with caramel!

Fantastic pudding! No Luck’s cans in UK but cut up apple and blackberries are just as good if not better! I have a condition which doesn’t allow me to rub in butter and flour so can’t make crumbles any more, so this recipe is just wonderful! Thank you

Do the croissants need to be stale/dried?
They can be, I have used fresh and it has been great! But it is also a great way to use stale ones.
