This Jalapeno Chicken is such a quick and flavorful weeknight dinner.  No need to call for takeout when you can whip up these crispy, tender bites of chicken that are smothered in a thick sweet and spicy sauce of soy sauce, garlic, vinegar, brown sugar, ketchup, onions and of course jalapenos.  The sticky, sweet, spicy chicken is fabulous over rice or mashed potatoes.

Ingredients

  • 1 pound chicken tenderloins
  • ½ cup cornstarch
  • 1 cup oil for frying
  • ¼ cup brown sugar
  • 1 small onion, chopped
  • 3 jalapenos, seeded and sliced
  • 2 teaspoons sesame oil
  • ⅓ cup lite soy sauce

Instructions

  4. Remove the chicken from the pan.
  5. In another skillet or the same one cleaned out add the sesame oil, onion and jalapenos.
  6. Saute these over medium heat until they start to become tender and slightly browned
  7. To the pan add the soy sauce, vinegar, brown sugar, garlic and ketchup.
  8. Whisk the sauce together.
  9. Add the chicken to the sauce.
  10. Cook everything over medium heat until the sauce becomes thick and coats the chicken. 
  11. Serve over rice or mashed potatoes.
