Okay, confession time: I am absolutely that person who could eat a whole jar of dill pickles in one sitting. I love them. I love them with sandwiches, I love them with grilled cheese, I even love them as a midnight snack straight from the fridge (my favorite way to eat them!) So it probably won’t surprise you that I’m also the kind of person who will absolutely wrap them in dough, stuff them with cheese and bacon, and bake them until golden and bubbly because why not?!

These Pickles in a Blanket are my latest obsession, and everyone else’s who tastes them.  If you’re a fellow pickle lover, just trust me on this one, I promise they are so surprisingly delicious.

Imagine a warm, flaky, buttery crescent roll wrapped around a crunchy mini dill pickle that’s been smothered in a creamy, cheesy bacon filling. Oh yes, bacon, cheese, pickles all together!  First time I made these everyone was surprised how good they were, and then the plate was demolished.  Yeah, they’re that good.

The first time I made these once they came out of the oven and I took that first bite… I immediately made a second batch. My husband literally walked through the kitchen, grabbed two, and said, “Whatever these are, make them again.” The kids loved them, I loved them, and now they’ve officially earned a permanent spot in my snack rotation.  I already am planning on making them for Thanksgiving lol.

They’re perfect for game day, after-school snacks, girls’ night appetizers, or honestly just because you’re craving something cheesy and salty that isn’t another plate of nachos. And the best part? They come together in under 30 minutes with ingredients who already have on hand, so these make the best late night movie snack.

Ingredients used for this pickle in a blanket recipe:

  • 16 mini dill pickles – Pat them dry really well so the dough doesn’t get soggy.

  • 4 ounces cream cheese – Let it soften so it mixes easily.

  • ¼ cup cooked, crumbled bacon – You can use the real stuff or store-bought bacon bits, either work great!

  • 1 cup shredded cheddar cheese – Sharp cheddar gives it the best flavor, but use any cheese you like. 

  • 1 egg + ½ tbsp milk – For brushing the tops to get that beautiful golden brown finish.

  • Dried dill – Adds that classic pickle-y flavor to the top.

  • Crescent Rolls– These add such a great buttery, flaky wrap for these pickles. 

How to make these Pickles in a Blanket:

    1. Preheat your oven to 350 degrees.
    2. Line a baking sheet with parchment paper. 
    3. Lay your crescent rolls and slice in half.
    4. Ina small bowl mix together the cream cheese, crumbled bacon and cheddar cheese.
    5. Spread the cream cheese mixture onto each crescent roll.
    6. Add a pickle.
    7. Roll the crescents up and place on the prepared baking sheet.
    8. Beat your egg and milk and brush the tops of the rolls.
    9. Sprinkle with dried dill.
    10. Bake for 12-15 minutes until golden.
    11. Serve!

 

 

How To Store:

  • Fridge: Store leftover pickles in a blanket in an airtight container in the refrigerator for up to 3 days.

  • Reheating: Reheat in the oven at 350°F for 8–10 minutes or pop them in the air fryer for 3–5 minutes. The microwave works too, but they won’t be as crispy.

  • Freezing: Not recommended. Pickles don’t hold their texture well once frozen and thawed — they can get mushy inside the dough.
