I always make extra Thanksgiving dinner just so I can have plenty of leftovers.  We always have plenty of sandwiches out of the leftovers.  Thick sandwiches stacked high with turkey, stuffing, cranberry sauce and a little mashed potato.  The flavors just go so well together. I saw you could take all those delicious Thanksgiving leftovers and make potato skins out of them and I was sold. 

These make for a delicious and quick lunch or dinner.  I know potato skins don’t always sound like they will be fast and easy but I promise this is a really quick recipe and once you make them the first time you will be making them again and again!

I use leftover turkey, mashed potatoes, stuffing and cranberry sauce in these potato skins. Everything gets stuffed into potato skins with a little cheese and baked. All your favorite thanksgiving food in one delicious bite. These thanksgiving leftover potato skins are a perfect way to use up those holiday leftovers.

I love that you can customize these how you like.  You can add any Thanksgiving leftovers you have.  Throw some green bean casserole in there!  You can totally make these to your family’s taste.

Can I use any Thanksgiving leftovers?

You can! Add that green bean casserole in there, leftovers veggies, ham, corn casserole, anything goes!

Can I add any cheese?

Sure you can!  Swiss, mozzarella, cheddar and even pepperjack are all delicious in this.

What should I serve this with?

I like to serve this with leftover cranberry sauce and turkey gravy for dipping.

How can I air fry these?

Just prepare them as above but pop them in the air fryer for about 8 minutes at 350.  Air fryers do vary so make sure you are checking yours.

Ingredients for these thanksgiving leftovers potato skins

  • Baking potatoes- Any size russet potatoes you prefer will work. 
  • Sharp white cheddar- You can use any cheese you prefer.
  • Thanksgiving turkey–  You can use any leftover turkey you have, light or dark meat works great. 
  • Leftover mashed potatoes – You could use sweet potatoes for the potato mixture if that’s what you like. 
  • Leftover cranberry sauce –  Homemade, jellied or whole berry sauce are perfect here. 
  • Leftover stuffing – This adds such great holiday flavor to these egg rolls.
  • Leftover gravy – For dipping!
  • Scallions- Green onions add a great pop of color and flavor.

How to make Thanksgiving Potato Skins

  1. Preheat oven to 400 degrees.
  2. Cut each potato in half lengthwise. 
  3. Scoop out the inside of the potato but leave a little so it’s stable. 
  4. Place the potato skins on a baking tray.
  5. Sprinkle the potatoes with salt and pepper.
  6. In a large mixing bowl combine the mashed potatoes, stuffing and turkey.
  7. Spoon the turkey mixture evenly into the 6 skins.
  8. Sprinkle with the cheese.
  9. Bake on a baking sheet for 15 minutes or until golden brown.
  10. Top with the cranberry sauce.
  11. Sprinkle with the scallions.
  12. Serve!
  13. Store leftovers in an airtight container for up to 3 days.
