Do I chill these in the fridge or freezer?
I chill them in the freezer because that makes it easier when dipping but you can also chill them in the fridge. Either way just make sure they stay cold while you are dipping the others.
Can I melt chocolate chips for dipping?
I have never had too much luck melting chocolate chips for dipping. You have to add a shortening or coconut oil to get it to a good dipping consistency. I always just buy the almond bark or candy melts. You can find these in the baking or party aisle of your grocery store. I have had great luck finding them at Walmart but craft stores carry them too!
Is almond bark the same as white chocolate?
It is! And I love working with it, it melts so easily and is perfect for dipping. I do not recommend using white chocolate chips for this at all, it almost never melts correctly and can make the dipping process very difficult.
Can I make these chick truffles ahead of time?
Sure!! I would say you could make these 3 days in advance. You can make them 3 months ahead of time if you freeze them before dipping in chocolate.
Do these chick cake truffles need refrigeration?
Depending on how long they will be around for. If you make them the night before and they will be eaten the next day you can leave them unrefrigerated. After that I would keep the leftover in the fridge just because there is cream cheese in the filling.
INGREDIENTS
- Box of carrot cake mix- Use your favorite carrot cake mix and bake according to box directions.
- Cream cheese- Make sure your cream cheese is softened, it will mix in easier and make a smoother filling.
- Yellow candy melts- You can get these at the party aisle of the grocery store or at a craft store.
- Sprinkles for decorating- I used tiny sprinkles for the eyes and nose and leaf sprinkles for the feet and wings.
How to make Carrot Cake Truffles
- Bake and cool your carrot cake according to the box directions. I like to bake mine in a 9×13 baking dish.
- Cube up the cake and place into a large mixing.
- Add the softened cream cheese.
- Using an electric mixer combine the cake and cream cheese until well combined.
- Roll the cake mixture into about 1-inch balls and place on a parchment-lined baking sheet.
- Chill the truffles for 2 hours or pop them in the freezer for an hour.
- Once solid melt your yellow candy melts in a microwave safe bowl in 30 second intervals until melted and smooth.
- Using a toothpick or 2 forks dip the truffles in the chocolate and tap off any excess before placing back on the parchment paper lined tray.
- Working quickly and one at a time decorate each chick after dipping.
- I used 2 mini chocolate chips for their eyes, a small round yellow sprinkle for the beak and yellow and orange leaf sprinkles for their feet and wings.
- Repeat with all the truffles.
- Once set serve!
- Store leftovers in the fridge in an airtight container for up to 3 days.
