Roasted Strawberry Ice Cream
It’s heating up in my corner of the world with temperatures over 100 earlier this
week. I am not ready for full on summer yet, although there are some parts of the
season that I’m always ready for…like ice cream! In my opinion it’s never too hot or
too cold to eat ice cream.
I love the slightly non-traditional styles of ice cream. A custard based vanilla or
chocolate? Ok. Give me mango or salted caramel any day!
This ice cream toes the line perfectly between traditional and exotic. It’s strawberry,
of course, which is a mainstay in the ice cream world, but the strawberries are
roasted with a touch of balsamic vinegar before being blended into the cream.
Roasting deepens the flavor. The balsamic compliments and enhances the
strawberry flavor without overwhelming it.
It’s the perfect beginner ice cream, since you don’t even need to create a custard.
You just blend the ingredients together and pop in your ice cream maker!
Roasted Strawberry Ice Cream
Makes 2-3 servings, easily doubled
1 lb strawberries, hulled and quartered (about 3 cups)
¼ cup sugar
1 tsp vanilla extract
2 tbsp balsamic vinegar, divided
½ pint whipping cream
pinch of salt
splash of vodka (optional, but keeps it from freezing too solidly to scoop)
To roast the strawberries, preheat your oven to 350. Cover a baking sheet with
aluminum foil (or it will be very sticky afterwards!) and set aside.
Toss the hulled and quartered strawberries with the sugar, vanilla extract and 1
tablespoon of the balsamic vinegar (and vodka if using). Let sit for a few minutes
and then pour onto the baking sheet, arranging into one layer.
Roast for 35-40 minutes. Let cool in pan slightly.
Pour the strawberries into a food processer or blender. Add the whipping cream,
salt and final tablespoon of balsamic vinegar. Blend until smooth.
Pour into your ice cream maker and follow manufacturer’s directions.
When it is finished in the ice cream maker it will be the consistency of soft serve. If
you’d prefer a more solid ice cream, freeze it for another hour or two before serving.
Mmmmm this sounds yummy. My daughter would love this too (minus the vodka for her of course….) I will definitely try this…
